Live demonstration !

What i did and how i did it to hit that 2nd place steak in San Antonio at the rodeo cook off.

Today I have a prime NY strip and a choice ribeye, the rodeo steaks were two Wagyu ribeyes.

Good morning BBQ Lovers, ArnieTex here. Thank you to everyone who has signed up for my Competition Pitmaster Class | Laredo, TX. I appreciate it tremendously. For those interested, there are still a few seats available. Check out the updated event link for location, times and other information. I'm happy to answer any and all questions.

This Pitmaster Class will cover everything from competition meat selection, trimming, injections, brines, rubs, sauces and of course the cooking process from start to finish and on an IBCA timeline for the best demonstration possible.

The class will end with a Q & A session where ALL questions will be answered. Ya'll come hungry because we are providing a Saturday night dinner and Sunday morning breakfast. All you need to bring is a pen, a notebook and an open mind. See ya'll there 👊🏽💥

What an amazing weekend we just had with some really great people. Check out the recap video by Steven Powell in the link below.

Howdy howdy BBQ Lovers, hoping that everybody had a great weekend and ate lots of barbecue 😉

The Competition Pitmaster Class in Spring, TX was one heck of great time, as a matter of fact it was one of the most enthusiastic and fun crowds I've had the pleasure of teaching. Lots of laughs, questions, smoke and BBQ with great people.

On Friday night our host for the weekend Steven Powell Fernado Ruiz and Carl Keller grilled up some awesome prime steaks seasoned to perfection with Texas Select Seasonings Basic Beef which was complimented by a great potato onion side dish by Carl Keller. Saturday morning was kick started by some incredible menudo and barbacoa compliments of Fernando Ruiz.

Huge, huge thanks goes out to my good friend Steven of Ugly Drum Smokers, Texas for hosting this at his beautiful home. What an amazing and super cool dude Steven is, building some of the best original and custom BBQ drums in Texas.

I was a little tentative since I hadn't cooked on one in about three years, but all of the food came out incredible, especially the brisket. I was even blown away at how good those drums worked and the flavor they put on the meats.

It was also the right time and place and I was able to purchase an awesome Lone Star Grillz from Steven for my smaller catering work. Thanks again, Steven. You made me one happy man! There's a cool recap video Steven put together on his page, also!

All in all, it was an incredible class and great group of people becoming friends over the weekend. The heat and humidity couldn't stop this class from going down. I couldn't have asked for a better experience.
