Have an abundance of cucumbers? Here is an easy recipe for a side dish to use some of them.

7 cups thinly sliced peeled cucumbers
2 cups sugar
1 large onion, chopped
1 medium green pepper, chopped
1 cup cider vinegar
1 tablespoon salt
1 tablespoon celery seed

In a large serving bowl, combine the cucumbers, onion and pepper. Mix remaining ingredients in bowl till sugar is dissolved and pour over the cucumber mixture. Stir and refrigerate for at least 1 hour stirring occasionally.

Deliciously sweet!
