A Kloster Interiors - Approved Recipe:

Carrot Cake

Moist, spicy, and just the right amount of sweet.
Perfect for sharing in a cozy kitchen or at your next gathering!

Ingredients:
* 2 cups grated carrots
* 1 1/2 cups all-purpose flour
* 1/2 cup brown sugar
* 1/2 cup granulated sugar
* 2 tsp cinnamon
* 1/2 tsp nutmeg
* 1/2 tsp baking soda
* 1/2 tsp baking powder
* 1/4 tsp salt
* 2 large eggs
* 1/2 cup vegetable oil
* 1/4 cup crushed pineapple (drained)
* 1/4 cup chopped walnuts
* 1 tsp vanilla extract

Cream Cheese Frosting:
* 8 oz cream cheese, softened
* 1/4 cup butter, softened
* 2 cups powdered sugar
* 1 tsp vanilla extract

Instructions:
1. Preheat oven to 350°F. Grease an 8x8" pan.
2. Mix dry ingredients in one bowl.
3. In another bowl, whisk eggs, oil, and vanilla. Stir in carrots and pineapple.
4. Combine wet and dry ingredients. Fold in nuts if using.
5. Pour into pan and bake 30–35 minutes or until toothpick comes out clean.
6. Let cool, then frost generously.
