π©βπ³ How to Make It
1οΈβ£ Prepare the eggplants. Wash the eggplants and slice them lengthwise into approximately Β½-inch (1.2 cm) thick slices. π
2οΈβ£ Salt the slices. Arrange the eggplant slices on a tray and sprinkle lightly with salt. Let them rest for 15β20 minutes to draw out some excess moisture.
3οΈβ£ Pat them dry. Use paper towels to remove the released moisture from both sides of the eggplant slices. β¨
4οΈβ£ Prepare the breading station. Set out three shallow bowls. Add flour to the first bowl, beaten eggs mixed with milk to the second, and breadcrumbs to the third. π₯
5οΈβ£ Season the breadcrumbs. Mix the panko breadcrumbs with Parmesan, garlic powder, paprika, oregano, black pepper, and a little salt. π§πΏ
6οΈβ£ Coat the eggplant. Dip each eggplant slice into the flour, shaking off the excess.
7οΈβ£ Dip into the eggs. Transfer the floured eggplant to the egg mixture, making sure both sides are evenly coated.
8οΈβ£ Add the crispy coating. Press the eggplant into the seasoned breadcrumb mixture, coating both sides generously. ππ₯
9οΈβ£ Rest the breaded slices. Place them on a clean tray for 5 minutes to help the coating adhere during cooking.
π Heat the olive oil. Add 2 tablespoons of olive oil to a large skillet over medium heat. π«
1οΈβ£1οΈβ£ Cook until golden. Add the breaded eggplant slices in a single layer and cook for approximately 3β5 minutes per side, until golden brown and crispy. Add more oil as needed between batches. π₯
1οΈβ£2οΈβ£ Check the center. Make sure the eggplant is tender all the way through. Lower the heat slightly if the breadcrumbs brown before the eggplant softens.
1οΈβ£3οΈβ£ Drain the schnitzels. Transfer the crispy eggplant to a wire rack to keep the coating crunchy while you prepare the remaining slices. π€€

Make the Homemade Tomato Sauce
1οΈβ£4οΈβ£ SautΓ© the onion. Heat 2 tablespoons of olive oil in a saucepan over medium heat. Add the chopped onion and cook for 3β4 minutes until soft and translucent. π§
1οΈβ£5οΈβ£ Add the garlic. Stir in the minced garlic and cook for approximately 30 seconds until fragrant. π§
1οΈβ£6οΈβ£ Add the tomato paste. Stir in the tomato paste and cook for 1 minute to deepen the flavor.
1οΈβ£7οΈβ£ Pour in the tomatoes. Add the crushed tomatoes, Italian herbs, salt, black pepper, and optional sugar. π
1οΈβ£8οΈβ£ Simmer the sauce. Reduce the heat to low and cook for 10β15 minutes, stirring occasionally, until slightly thickened.
1οΈβ£9οΈβ£ Add fresh basil. Tear the basil leaves into the sauce and stir gently. πΏ
π½οΈ Assemble & Serve
2οΈβ£0οΈβ£ Prepare the plates. Spoon a generous layer of warm homemade tomato sauce onto each serving plate.
2οΈβ£1οΈβ£ Add the crispy schnitzel. Place the golden eggplant schnitzels over or alongside the tomato sauce, keeping most of the crispy coating uncovered. ππ
2οΈβ£2οΈβ£ Finish with Parmesan. Sprinkle with freshly grated Parmesan and garnish with fresh basil leaves. π§πΏ
2οΈβ£3οΈβ£ Add a fresh touch. Serve with lemon wedges and a little freshly ground black pepper. π
2οΈβ£4οΈβ£ Enjoy immediately! Cut into the golden, crunchy coating to reveal the soft, tender eggplant inside. ππ€€
π‘ Tips for Extra-Crispy Eggplant Schnitzel
π₯ Use panko breadcrumbs: They create a lighter, crunchier coating than regular breadcrumbs.
π Slice evenly: Keeping the slices the same thickness helps them cook at the same rate.
π§ Add Parmesan: It gives the crust a delicious savory flavor.
π
Serve sauce on the side: For maximum crunch, dip each bite into the warm tomato sauce instead of covering the schnitzel completely.
πΏ Finish with fresh basil: It adds wonderful aroma and freshness.
