Shepherd's Pie Soup🍲🥧

This hearty and comforting soup combines all the savory flavors of a classic shepherd's pie, with ground beef, vegetables, and a rich, creamy broth, topped with mashed potatoes. A warm, filling dish perfect for a cozy meal!

Ingredients
1 tablespoon olive oil
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
3 carrots, peeled and diced
2 celery stalks, chopped
1 cup frozen peas
4 cups beef broth
2 cups water
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
Salt and pepper to taste
2 cups mashed potatoes (prepared ahead)
Fresh parsley for garnish (optional)

Directions
Cook the Ground Beef:
In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.

Sauté the Vegetables:
Add the chopped onion, garlic, carrots, and celery to the pot with the beef. Cook until the vegetables are softened, about 5-7 minutes.

Add the Broth and Seasonings:
Pour in the beef broth and water. Stir in the Worcestershire sauce, dried thyme, rosemary, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender.

Add the Peas:
Stir in the frozen peas and cook for another 5 minutes.

Add the Mashed Potatoes:
Scoop in the prepared mashed potatoes, stirring until the soup becomes thick and creamy. If the soup is too thick, you can add a little extra water or broth to reach your desired consistency.

Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot and enjoy this comforting shepherd's pie in soup form!

Black Bean Pumpkin and Butternut Squash Soup with Cream Cheese🍂🎃

This hearty and flavorful soup combines the warmth of butternut squash, the richness of pumpkin, and the earthy goodness of black beans, all rounded off with a creamy touch of cream cheese for a velvety texture. Perfect for cozy nights!

Ingredients
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
3 cups butternut squash, peeled and cubed
1 1/2 cups pumpkin puree
1 can (15 oz) black beans, drained and rinsed
4 cups vegetable broth
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
Salt and pepper to taste
4 oz cream cheese, softened
Fresh parsley for garnish (optional)

Directions
Prepare the Soup:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.

Add the cubed butternut squash, pumpkin puree, black beans, and vegetable broth to the pot. Stir in the cumin, cinnamon, nutmeg, ginger, salt, and pepper. Bring the soup to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the squash is tender.

Blend the Soup:
Use an immersion blender to blend the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.

Add the Cream Cheese:
Once the soup is blended, return it to the pot (if using a regular blender). Stir in the softened cream cheese until fully incorporated and the soup is creamy.

Serve and Garnish:
Ladle the soup into bowls and garnish with fresh parsley, if desired. Serve hot and enjoy!
