Shepherd's Pie Soup🍲🥧
This hearty and comforting soup combines all the savory flavors of a classic shepherd's pie, with ground beef, vegetables, and a rich, creamy broth, topped with mashed potatoes. A warm, filling dish perfect for a cozy meal!
Ingredients
1 tablespoon olive oil
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
3 carrots, peeled and diced
2 celery stalks, chopped
1 cup frozen peas
4 cups beef broth
2 cups water
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
Salt and pepper to taste
2 cups mashed potatoes (prepared ahead)
Fresh parsley for garnish (optional)
Directions
Cook the Ground Beef:
In a large pot, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.
Sauté the Vegetables:
Add the chopped onion, garlic, carrots, and celery to the pot with the beef. Cook until the vegetables are softened, about 5-7 minutes.
Add the Broth and Seasonings:
Pour in the beef broth and water. Stir in the Worcestershire sauce, dried thyme, rosemary, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes, or until the vegetables are tender.
Add the Peas:
Stir in the frozen peas and cook for another 5 minutes.
Add the Mashed Potatoes:
Scoop in the prepared mashed potatoes, stirring until the soup becomes thick and creamy. If the soup is too thick, you can add a little extra water or broth to reach your desired consistency.
Serve and Garnish:
Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot and enjoy this comforting shepherd's pie in soup form!
