Savory Beef and Broccoli Stir-Fry
The secret to this dish is the velvety texture of the beef and that rich, ginger-garlic sauce that clings to every floret.
Ingredients
1 lb Flank Steak or Sirloin: Thinly sliced against the grain.
1 lb Broccoli Florets: Fresh and cut into bite-sized pieces.
2 tbsp Vegetable Oil: For high-heat cooking.
3 Cloves Garlic: Minced.
1 tbsp Fresh Ginger: Grated.
Garnish: Sliced green onions and sesame seeds.
The Signature Stir-Fry Sauce:
1/2 cup Soy Sauce.
1/3 cup Brown Sugar: For that perfect balance of sweet and savory.
1 tbsp Sesame Oil.
1 tbsp Cornstarch: To get that glossy, thick consistency.
1/4 cup Water or Beef Broth.
Instructions
Velvet the Beef: For extra tender meat, toss your sliced beef with 1 tsp of cornstarch and a splash of soy sauce. Let it sit for 10 minutes.
Whisk the Sauce: In a small bowl, combine the soy sauce, brown sugar, sesame oil, cornstarch, and water. Stir until the sugar and starch are fully dissolved.
Sear the Beef: Heat a large skillet or wok over high heat with 1 tbsp of oil. Sear the beef in a single layer until browned (about 2 minutes). Remove the beef from the pan and set aside.
Sauté Broccoli: Add the remaining oil to the pan. Toss in the broccoli with a splash of water and cover for 2 minutes to steam-cook it until bright green and crisp-tender.
Aromatics & Sauce: Add the garlic and ginger to the broccoli and sauté for 30 seconds until fragrant. Pour in the sauce mixture.
The Finish: Once the sauce begins to bubble and thicken, add the beef back into the pan. Toss everything together for 1–2 minutes until the sauce creates that beautiful "glossy" look seen in the video.
Serve: Pile it high over steaming white rice and garnish with fresh green onions.
