Ingredients
3-4 lbs Beef Chuck Roast: The best cut for shredding.

1 lb Wide Egg Noodles: Cooked according to package directions.

2 tbsp Olive Oil: For searing.

1 Onion: Diced.

2 Carrots: Diced.

3 cloves Garlic: Minced.

2 cups Beef Broth.

1/2 cup Red Wine: (Optional) Use extra broth if preferred.

2 tbsp Worcestershire Sauce.

1 tsp Dried Thyme.

2 tbsp Cornstarch: Mixed with 2 tbsp cold water (for the gravy slurry).

Instructions
Sear the Beef: Season the roast generously with salt and pepper. Heat olive oil in a large pot or Dutch oven over high heat. Sear the beef on all sides until a deep brown crust forms. Remove and set aside.

Sauté Aromatics: In the same pot, add the onions and carrots. Cook for 5 minutes until softened. Add the garlic and thyme, stirring for 1 minute until fragrant.

Sauté Broccoli: Add the remaining oil to the pan. Toss in the broccoli with a splash of water and cover for 2 minutes to steam-cook it until bright green and crisp-tender.

Aromatics & Sauce: Add the garlic and ginger to the broccoli and sauté for 30 seconds until fragrant. Pour in the sauce mixture.
