The secret to this skin? Patience and high-heat finishing.

🐷Prep the Skin: Use a sharp needle tool or a clean box cutter to prick hundreds of tiny holes into the skin without piercing the meat.
​🐷Dry Brine: Rub the meat side with salt, five-spice powder, white pepper, and garlic powder. (as always, I eyeballed it)
🐷The Skin Treatment: A thick layer of coarse sea salt (to draw out moisture). Then place it skin-side up in the fridge uncovered for 12–24 hours to dehydrate the skin.
🐷Rice ​Vinegar Brush: Right before roasting, scrape off the salt and brush the skin lightly with rice vinegar to help break down the surface fibers for a better crunch.
​🐷The Oven: Roast at 380°F for about 30-40 minutes. Use the thermometer to check for doneness.
​🐷The Crackle: broil on high for 15–20 minutes until the skin bubbles and becomes golden-brown.
​🐷Resting: Let the roast rest for at least 15 minutes before slicing to ensure the juices stay in the meat.

​Creamy, spicy, and perfectly balanced. This Shrimp Tom Yum Pasta brings all the iconic flavors of the classic Thai soup to a silky, rich pasta dish.

​The "Eyeballed" Ingredients:
​🍤The Base: Tom yum paste, heavy cream, and coconut cream. (Using both heavy cream and coconut cream gives the sauce an incredible body that clings perfectly to the pasta.)
​🍤The Protein: Fresh shrimp.
​🍤The Aromatics: Chili, lime, garlic, parsley, salt, sugar, and pepper.
🍤​Your favorite pasta.

What to do with leftover rice? Make fried rice!
I whipped up a quick Shrimp Fried Rice; simple, fast, and so satisfying.

Prep:
2 cups leftover rice, ½ lb shrimp, 3 eggs, sliced green onions, chili, and cilantro.
2 tbsp soy sauce (or more to taste)

Instructions:
🍤Sauté shrimp in a hot oiled pan until pink; remove.
🍤Scramble eggs in the same pan; remove.
🍤Add a little more oil, toss in rice, and stir-fry until hot and slightly toasty. (The trick my parents taught me — when you see the rice “jump,” it’s ready 😉. Only works with long grain rice).
🍤Toss in shrimp, eggs, chili, and green onions. I love cilantro, so I added about 1 cup.
🍤Drizzle with soy sauce, toss well, and serve.

That Tom Yum pasta was mild at first, but once I added lime... wow, it really brought everything together. So yummy and creamy!

I’m a huge pistachio fan, so when I saw this at Costco, I had to try it especially after hearing good reviews. Honestly… it was a bit disappointing for me 😕

It’s way too sweet and doesn’t really have much pistachio flavor. I was expecting something more nutty and rich like the crunchy peanut butter. Also, the “crunchy” part isn’t even pistachios...it’s from kadayif (shredded phyllo dough), which I didn’t realize and wasn’t what I expected. I probably won’t buy this again.

I came across these purple sweet potato chips, Pringle style. When you first pop them open, there’s really no smell at all. The first bite is crunchy, but the flavor is very mild. You get a light hint of sweet potato, with not much salt or sweetness. Overall, the flavor is very subtle. It’s interesting to try once for the experience, but I wouldn’t buy these again.
