Funfetti Cheesecake Cake
🌿 Ingredients:
For the Cheesecake Layer:
16 oz (450 g) cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1/4 cup sour cream
1 tsp vanilla extract
For the Funfetti Cake Layers:
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 tbsp vanilla extract
1 cup whole milk
1/2 cup rainbow sprinkles (jimmies, not nonpareils)
For the Frosting:
1 1/2 cups unsalted butter, softened
5 cups powdered sugar
2 tbsp heavy cream or milk
2 tsp vanilla extract
Additional sprinkles for decoration
🔥 Instructions:
Make the Cheesecake Layer:
Preheat oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
Beat cream cheese and sugar together until smooth. Add eggs, one at a time, mixing well after each. Stir in sour cream and vanilla extract.
Pour the cheesecake batter into the pan and bake for 35–40 minutes, or until the center is set.
Let cool at room temperature, then refrigerate for at least 4 hours or overnight.
Make the Funfetti Cake Layers:
Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
In a medium bowl, whisk flour, baking powder, and salt.
In a large bowl, cream butter and sugar together until light and fluffy. Add eggs one at a time, then stir in vanilla.
Add dry ingredients alternately with milk, beginning and ending with the dry ingredients.
Gently fold in sprinkles.
Divide the batter evenly between the prepared pans and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Let cakes cool completely before assembling.
Prepare the Frosting:
Beat butter until smooth and creamy. Gradually add powdered sugar, mixing well after each addition.
Add vanilla extract and heavy cream, beating on high until fluffy.
Assemble the Cake:
Place one funfetti cake layer on a serving plate.
Carefully remove the cheesecake layer from the springform pan and place it on top of the cake layer.
Top with the second funfetti cake layer.
Frost the entire cake with buttercream frosting.
Decorate with additional rainbow sprinkles.
Chill and Serve:
Refrigerate for at least 1 hour before slicing for clean layers.
Slice, serve, and enjoy the creamy, festive goodness!
