Pasta in the sun: burrata, candied tomatoes and pine nuts
Ingredients
200 g of spaghetti
2 cloves of garlic
20 g pine nuts
200 g red and yellow cherry tomatoes
1 burrata (125 g)
2 tablespoons of extra virgin olive oil
1 tablespoon balsamic vinegar
1 handful of fresh basil leaves
1 teaspoon dried oregano
½ teaspoon of Espelette pepper (optional)
Salt and freshly ground black pepper
Preparation
Preheat the oven to 180°C.
Cut the cherry tomatoes in half and place them on a baking sheet with the minced garlic, oregano, oil, vinegar, salt and pepper. Bake for 20 minutes.
Cook the spaghetti until al dente in a large pot of salted water. Reserve a ladle of cooking water and drain the pasta.
Toast the pine nuts in a dry pan until golden.
In the pan, mix the drained pasta with the candied tomatoes, a little cooking water, chopped basil and Espelette pepper (optional).
Divide the pasta into deep plates. Place the burrata in the center, open it slightly, drizzle with olive oil, sprinkle with pine nuts and pepper.

MARRY ME SALMON RECIPE 🐟😋

📋 Ingredients:

For the Salmon:

4 salmon fillets (6 oz each, skinless or with skin).

2 Tbsp olive oil.

1 tsp garlic powder.

1 tsp onion powder.

1/2 tsp smoked paprika.

Salt & pepper to taste.

For the Sauce:

2 Tbsp unsalted butter.

3–4 garlic cloves, minced.

1 cup heavy cream.

1/3 cup chicken broth (or vegetable broth).

1/2 cup grated Parmesan cheese.

1/2 tsp chili flakes (optional, for heat).

1/2 cup sun-dried tomatoes, chopped.

1 tsp dried basil (or Italian seasoning).

1/2 cup fresh spinach, chopped.

Salt & pepper to taste.

👩‍🍳 Directions:

1️⃣ Pat salmon fillets dry with a paper towel and season with garlic powder, onion powder, smoked paprika, salt, and pepper.

2️⃣ Heat olive oil in a large skillet over medium heat, sear the salmon fillets for 3–4 minutes per side until golden brown, then remove and set aside.

3️⃣ In the same skillet, melt butter over medium heat, add minced garlic and sauté for about 1 minute until fragrant.

4️⃣ Stir in heavy cream, chicken broth, and Parmesan cheese, mixing well until the cheese is melted and sauce thickens slightly.

5️⃣ Add chili flakes (if using), sun-dried tomatoes, and dried basil, then let simmer for 2–3 minutes before stirring in fresh spinach until wilted.

CREAMY CHICKEN OVER RICE BOWL 🍗🍚

📋 Ingredients:

For the Chicken:

2 tbsp butter

1 tbsp olive oil

1 lb boneless, skinless chicken breasts, diced

Salt and black pepper, to taste

1 small onion, finely diced

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1/4 tsp paprika

2 tbsp fresh parsley, chopped (plus more for garnish)

For the Rice:

1 cup long-grain white rice

2 cups water or chicken broth

Pinch of salt

👩‍🍳 Directions:

1️⃣ Cook the Rice:

In a medium saucepan, bring water or chicken broth to a boil.

Stir in the rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18–20 minutes until rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

2️⃣ Sauté the Chicken:

In a large skillet, melt the butter with olive oil over medium heat.

Cajun Surf & Turf with Garlic Cream Mashed Potatoes 🥩🍤🧄

Ingredients:

For the Steak:

2 filet mignon steaks (or sirloin)

Salt & pepper to taste

1 tbsp olive oil

2 tbsp butter

2 cloves garlic, minced

1 tsp chopped parsley (for garnish)

For the Shrimp:

8–10 large shrimp, peeled & deveined

1 tbsp olive oil

1 tbsp butter

1 tsp Cajun seasoning

1/2 tsp garlic powder

Squeeze of lemon juice

For Garlic Cream Mashed Potatoes:

3 large Yukon gold potatoes, peeled and cubed

4 tbsp unsalted butter

1/2 cup heavy cream

3–4 cloves roasted garlic (or sautéed minced garlic)

Salt & black pepper to taste

Fresh parsley (optional garnish)

Instructions:

1. Make the Mashed Potatoes:

Boil potatoes in salted water for 15–20 minutes until fork-tender.

Drain and mash with butter, heavy cream, garlic, salt & pepper until creamy.

Keep warm.

2. Cook the Steaks:

Pat steaks dry and season generously with salt and pepper.

Heat olive oil in a hot skillet over medium-high heat.

Add steaks and sear for 3–4 minutes per side (or to desired doneness).
