Crunchy Chicken Romesco Sandwich

A delectable sandwich featuring juicy chicken, layered with tangy romesco sauce and fresh salad, encased in perfectly grilled focaccia.

Components :

Chicken breast cutlets.
Olive oil.
Flour.
Panko breadcrumbs.
Egg, whisked.
Roasted red bell peppers.
Garlic cloves.
Balsamic vinegar.
Sun-dried tomatoes.
Almonds, toasted.
Paprika.
Kosher salt.
Jarred roasted peppers.
Sour cream.
Mayonnaise.
Lemon juice.
Parmesan, grated.
Black pepper.
Gem lettuce, chopped.
Arugula.
Focaccia breads.
Butter.
Parsley, fresh.

Preparation Steps :

Place chicken slices in flour, followed by egg, then breadcrumbs.
Fry each coated cutlet in heated olive oil until golden brown.
Blend garlic, roasted peppers, sun-dried tomatoes, almonds, vinegar, olive oil, paprika, and salt until smooth for the sauce.
In a bowl, mix sour cream, mayonnaise, lemon juice, Parmesan, and black pepper.
Mix lettuce and arugula into the creamy mixture to create the salad.

Sweet Peach Iced Tea

A refreshing peach-flavored iced tea perfect for warm days.

Ingredients Needed :

Honey, 3/4 cup.
Sugar, 3/4 cup.
Water, 5 cups, divided.
Tea bag, family-size.
Frozen peaches, 2 cups, pureed and thawed.
Frozen peaches, 2 cups for serving.

Preparation Steps :

Heat four cups of water to a rolling boil.
Take off the heat and submerge the tea bag, steeping for five minutes.
Transfer brewed tea to a two-quart pitcher and reserve for later.
In another saucepan, mix sugar, honey, with a cup of water; bring to a full boil.
Stir until sugar completely dissolves, integrate pureed peaches, allow a low boil.
Cool down, strain the mixture through a fine mesh, pressing firmly to extract juice, discard pulp.
Infuse peach syrup into the tea, adjusting sweetness to taste.
Serve by placing frozen peach slices into four glasses, add ice, pour prepared tea over.

Mini Lamb Burgers With Dill Greek Yogurt

Delightful little lamb patties paired with a refreshing dill-infused yogurt sauce, all tucked within mini pitas.

Revised Ingredients List :

Onion, small.
Cucumber, thin.
Dried dill, teaspoon.
1 lb Ground lamb.
2 1/2 tsp Rosemary, dried.
2 tsp Oregano, dried.
2 Garlic cloves, large.
1 Egg yolk.
2 tsp Lemon juice.
1 tsp Kosher salt.
2 1/3 tbsp Olive oil.
3 tbsp Breadcrumbs.
15 Pitas, mini.
5 1/2 oz Greek yogurt, plain.

Cooking Directions :

In a large mixing bowl, combine lamb, rosemary, oregano, minced garlic, chopped onion, salt, egg yolk, breadcrumbs, and 1 teaspoon of olive oil. Stir gently until just combined.
Shape the mixture into 15 thin, round patties.
Warm a large griddle or cast-iron skillet over medium-high heat and drizzle with a small quantity of olive oil.
Place the patties on the griddle or skillet. Use a spatula to press them down lightly.
Cook for 2 to 3 minutes until the bottom is golden and crispy, then flip and cook for an additional 1 to 2 minutes on the other side.
In a separate bowl, mix Greek yogurt with dried dill and lemon juice. Season with salt and pepper to taste, stirring until well blended.
Carefully cut a pocket into each pita to allow room for the patties.
Fill each pita with a cooked lamb patty, and top with a spoonful of dill sauce and sliced cucumbers.
