Oxtail Bone Broth Soup Recipe
Ingredients
• 9–12 oxtails (4–5 lb)
• 1 large ginger, sliced (divided)
• 4 garlic cloves, chopped
• 1 onion, sliced
• 1 cup tomatoes, chopped
• 4 celery stalks, chopped
• 1 cup carrots, chopped
• 6 Yukon Gold potatoes, halved
• 1 small cabbage, chunked
• 2 bay leaves
• 3 tbsp ketchup (or to taste)
• 3 tbsp sugar
• Salt & pepper
• Neutral oil
• Water
Instructions
1. Broth: Simmer oxtails with half the ginger in water for 4–6 hours. Cool, refrigerate overnight, and remove the fat layer.
2. Soup Base: Sauté garlic and remaining ginger in oil. Add onion, tomatoes, celery, and carrots; cook until softened.
3. Add potatoes, bay leaves, oxtails, and broth (plus water if needed). Simmer 1 hour.
4. Add cabbage, ketchup, sugar, salt, and pepper. Simmer 2–3 hours on low.
Tip: Mash a few potatoes in the pot to naturally thicken the broth.
