Creamy Sausage Rigatoni
This rich, creamy pasta is the kind of meal that fills the kitchen with incredible aromas and brings everyone to the table fast. It’s hearty, comforting, and comes together in one pan perfect for a cozy night in.
The sauce hugs every piece of rigatoni, with savory sausage, garlic, and a silky tomato cream that feels indulgent in the best way.
Ingredients
1 tablespoon olive oil
15 oz Italian sausage (sweet or spicy, crumbled)
8 oz rigatoni pasta (uncooked)
1 cup chicken broth
1 cup heavy cream
4 cloves garlic, minced
1 teaspoon Italian seasoning or Herbs de Provence
15 oz tomato sauce or marinara
5 oz fresh spinach
Salt, to taste
Coarsely ground black pepper, to taste
Red pepper flakes (optional)
Instructions
Heat olive oil in a large, deep skillet over medium heat.
Add the crumbled sausage and cook for about 5 minutes, breaking it into small pieces as it browns. Drain excess grease if needed.
Add the uncooked rigatoni, chicken broth, heavy cream, garlic, Italian seasoning, and tomato sauce. Stir well to combine.
Bring to a gentle boil, then cover and reduce to a simmer. Cook for 10–15 minutes, stirring occasionally, until the pasta is tender.
Add the fresh spinach and stir until wilted, about 2–4 minutes.
If you want a thicker sauce, simmer uncovered for a few extra minutes.
Season with salt, black pepper, and red pepper flakes to taste.
Serve hot, optionally topped with freshly grated cheese.
