Hamburger Pie - What a Wonderful Meal! Sunday Subscriber Series

1 cup chopped onion
1 pound ground round or chuck
2 Tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
1 Tablespoon Worcestershire sauce
2 Tablespoons chili sauce (or ketchup)
2 Tablespoons flour
9ā€ or 10ā€ unbaked pie shell
1 cup cottage cheese
1/2 cup sour cream
2 eggs
Paprika
Parsley or chives

Preheat oven to 350°.

Cook onions and beef in the butter. Break up the meat and cook until done. Drain excess grease off the meat.

Stir in the salt, pepper, Worcestershire sauce, chili sauce, and flour.

Spoon meat into the unbaked pie shell.

Blend together the cottage cheese, sour cream, and eggs. Once well blended, pour over the meat mixture.

Bake in a 350° oven for 30 to 40 minutes. Remove from the oven and sprinkle with paprika and either parsley or chives.

Crispy Buttered Ranch Chicken

1 pack (3 pounds) chicken tender strips
1 cup butter, melted
2 cups Panko bread crumbs
1 package (1.1 ounce) Ranch Seasoning
1 cup (5 ounce tub) grated Parmesan Cheese
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)

Preheat oven to 400°. Line a baking sheet with parchment paper.

In a shallow dish combine the breadcrumbs, Ranch Seasoning, Parmesan Cheese, garlic powder, paprika, salt and pepper. Mix together.

Melt the butter and then dip the chicken strips into the melted butter and coat on all sides.

Press the buttered chicken strips into the breadcrumb mixture. Be sure the chicken strips are fully coated. Shake off any excess crumbs.

Arrange the coated chicken strips in a single layer on a parchment paper lined cookie sheet.

Bake in a 400° oven for 18 to 22 minutes or until the chicken is cooked throughout and an internal temperature of 165° is reached. The crust will be a golden brown. Remove from the oven when they are done and let them rest for 2 to 3 minutes before serving. Serve with a variety of sauces and dips, if desired.
