Hello, friends.

I am very sad to have to tell you that I will no longer offer meals to the public. The cost of ingredients has gone up so much that I can’t make the numbers work anymore. I am open to cooking occasionally if you have a particularly busy week or if you are craving something specific I have made for you in the past. I’m only a text away and would embrace the opportunity. I want to thank you for allowing me to cook for your family. It truly blessed my soul.

This week’s meal is on the lighter side. Balsamic Chicken and Minnesota Rice is tender chicken thighs with peppers and onions in a light Balsamic sauce served with a mixture of wild and brown rice. My sweet daughter first made this for me when I visited her in Dublin, so making it for you will bring back precious memories for me.
