Blueberry Mousse Heaven Cheesecake Recipe 🍰✨
A luscious, multi-layered dessert featuring a creamy cheesecake base, topped with a light blueberry mousse and a glossy blueberry glaze. It’s perfect for any special occasion!
Ingredients:
For the Cheesecake Base:
Graham Cracker Crumbs: 1 ½ cups
Granulated Sugar: 1/4 cup
Unsalted Butter: 1/2 cup, melted
Cream Cheese: 16 oz, softened
Granulated Sugar: 1 cup
Eggs: 2 large
Vanilla Extract: 1 tsp
Sour Cream: 1/2 cup
For the Blueberry Mousse:
Fresh Blueberries: 1 ½ cups (plus extra for garnish)
Granulated Sugar: 1/4 cup
Lemon Juice: 2 tbsp
Heavy Cream: 1 cup
Powdered Sugar: 1/4 cup
Vanilla Extract: 1 tsp
Gelatin: 1 ½ tsp, dissolved in 2 tbsp water
For the Blueberry Glaze:
Blueberry Preserves: 1/2 cup
Lemon Juice: 1 tbsp
Water: 1 tbsp
Instructions:
Preheat the Oven:
Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
Make the Crust:
In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the prepared pan to form an even layer. Bake for 8-10 minutes, then let cool.
Prepare the Cheesecake Filling:
In a large bowl, beat the softened cream cheese and 1 cup granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream. Pour batter over the cooled crust, smoothing the top.
Bake:
Bake cheesecake for 45-50 minutes, or until the center is just set. Turn off the oven and let the cheesecake cool inside with the door slightly open. Once cooled, refrigerate for at least 4 hours or overnight.
Make the Blueberry Mousse:
In a small saucepan, cook blueberries, 1/4 cup granulated sugar, and lemon juice over medium heat until the berries break down (about 5-7 minutes). Blend until smooth, then strain through a sieve to remove seeds. Let puree cool. In a separate bowl, whip heavy cream, powdered sugar, and vanilla until soft peaks form. Fold in blueberry puree, then gently stir in dissolved gelatin.
Spread the Mousse:
Once cheesecake has chilled, spread blueberry mousse evenly over the top. Refrigerate for another 2 hours to set the mousse.
Make the Blueberry Glaze:
In a small saucepan, heat blueberry preserves, lemon juice, and water until smooth and glossy. Let it cool slightly.
Garnish and Serve:
Drizzle blueberry glaze over the mousse layer and garnish with fresh blueberries. Serve chilled!
