Cherry Lattice Pie 🍒🥧
Ingredients:
- 2 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon butter, diced
- 1 package refrigerated pie crusts
- 1 egg, beaten (for egg wash)
- Sugar for sprinkling
Directions:
1. Preheat your oven to 425°F (220°C). This is the perfect temperature to get that crust nice and golden.
2. In a large bowl, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Mix well and let it sit for about 10 minutes. This allows the flavors to meld and the cherries to release their juices.
3. Roll out one pie crust and place it in a 9-inch pie pan. This will be the cozy home for our cherry filling!
4. Pour the cherry mixture into the crust and dot with the diced butter. This little addition will ensure your filling is rich and flavorful.
5. Roll out the second pie crust and cut it into strips to create a gorgeous lattice top. Arrange the strips over the filling in a crisscross pattern. Don't worry about perfection – rustic is the new chic!
6. Trim and crimp the edges to seal everything in. You want every last drop of that goodness to stay inside.
7. Brush the lattice with the beaten egg and sprinkle a bit of sugar on top for extra sweetness and a lovely gloss.
8. Bake for 25-30 minutes until the crust is golden brown and the filling is bubbling. Your kitchen is about to smell amazing!
9. Allow to cool before serving. This is the hardest part, but trust me, it's worth the wait!
