☘️If you’re not sure how you feel about tofu, give this Gluten free recipe, a try.

☘️INGREDIENTS
7 ounces extra firm tofu
1 tablespoon regular olive oil
cooking spray
1 clove garlic, minced
3 cups assorted stir-fry vegetables
3 tablespoons sweet chili sauce
2 tablespoons Sriracha hot sauce
2 teaspoons soy sauce
2/3 cup brown rice, cooked

☘️INSTRUCTIONS
An hour before cooking, wrap the tofu in paper towels and place between two plates to help press out the liquid. Slice the tofu into even cubes.
Heat the oil in a non-stick pan over medium-high heat. Add the tofu cubes and allow them to pan fry until golden on one side and then turn the pieces. Brown at least 4 sides for the best texture.
Set the tofu aside and if the pan is no longer oily, add some cooking spray. Saute the garlic and vegetables over medium-high heat with a bit of salt.
While the tofu and vegetables are cooking, stir together the sauce ingredients.
Serve the tofu and vegetables with the sauce over brown rice.

☘️INGREDIENTS
2 cups spinach
1/4 cup fresh mint leaves
2 stalks celery (chopped)
1 cup brewed green tea (cooled)
1 large grapefruit (peeled and seeded)
2 cups pineapple chunks (frozen)
1/2 large avocado
1/8 teaspoon ground cayenne pepper (optional)

☘️INSTRUCTIONS
Place spinach, mint, celery, and green tea into blender.
Puree until smooth.
Add remaining ingredients.
Blend again.

🥦The most important thing to remember, is that a balanced diet is the secret to healthful eating. A healthy dinner recipe for all vegans.

🥦Black Bean Stuffed Sweet Potatoes
Ingredients:
4 medium- large sweet potatoes
1/2 cup of Cashew Cream Sauce
1 teaspoon of lime juice
1/2 teaspoon of ground black pepper
1/2 of a medium red onion, finely diced (about 1 cup diced)
1 1/2 tablespoons of oil (I used olive oil)
1/4 teaspoon of garlic powder
1/4 teaspoon of onion powder
1/4 teaspoon of cumin
1/4 teaspoon of chili powder
1/2 teaspoon of sea salt
1 can of black beans, drained and rinsed

🥦INSTRUCTIONS
Pre-heat oven to 350 degrees F.
👉Place the sweet potatoes on a lightly greased baking tray and bake for 55-65 minutes or until a fork can easily be inserted into the flesh of the potatoes.
Prepare the cream sauce by whisking together the cashew cream sauce, lime juice, and black pepper. Set aside.
👉When the sweet potatoes have about 10 minutes left, heat the oil in a skillet over medium heat and then add in onion. Saute for 5 minutes until the onions begins to become translucent. Add in the spices stir and cook for an additional 3 minutes.
👉Add the black beans to the skillet and toss to combine. Continue to cook, stirring frequently, until the black beans are fully heated through. About 5 minutes. Take off of heat and set aside.
👉Once the sweet potatoes are done baking, let cool slightly. Once cool, cut the sweet potatoes open and shred the flesh from the skin so that the inside is mashed and easy to scoop out.
Evenly spread the black bean mixture, avocado, cilantro, and cashew cream sauce on top of the 4 sweet potatoes.
Serve immediately and ENJOY!!

☘️ingredients
3 cups organic kale, about 3-4 large stalks with the stems removed or any greens of your choice
4 organic brussel sprouts
1/4 cup organic cabbage, chopped
1/4 cup shredded carrots
1/4 cup broccoli cuts
2 tablespoons walnuts
2 tablespoons sunflower seeds
2 tablespoons dried cranberries
Ginger Tahini Dressing
Lemon Poppy Seed Dressing

☘️Instructions
Wash and chop greens into small pieces. Use your hands to massage the leaves in order to help tenderize them and make them easier to chew and digest.
Toss the remaining ingredients and salad dressing of your choice.

🤩Do you want to make something quick and easy, then here is a recipe for you. Chill Cheese Toast

☘️Ingredients
6 slices Sandwich Bread
4 tbsp Butter
2-3 small Red Chili or green chili, finely chopped
1 tsp salt
200 grams Cheese processed/cheese grated/slices
2-3 cloves garlic or 1 tsp garlic powder
1 tsp Red Chili Flakes
Coriander Leaves as required for garnish
Red Chili Flakes as required for garnish

☘️Instructions
In a plate, place 4 bread slices. Apply soft butter generously over the bread.
Sprinkle some salt and the grate the processed cheese on top of the slices.
Place the chopped red chili over the bread slices.
Add the garlic and red chili flakes on top. Grate some more cheese on top.
Place the bread slices on a baking tray or a pizza screen.
Preheat the oven at 200°C in broil mode for 10 minutes. And bake the chili cheese toast for 2 minutes.
After one minute of cooking rotate the baking tray, so that everything is evenly cooked. Once done remove and allow it to cool.
Sprinkle some red chili flakes and chopped coriander leaves on top.

☘️Delicious soft honey glazed carrots complemented with tarragon and mint.
Very easy to prepare and ready in 20 minutes.

☘️Ingredients
4 carrots
2 tbsp olive oil
2 tbsp tarragon (fresh is great, dry is still fine)
5 mint leaves
salt and pepper to taste
2 tsp maple syrup (or honey)

☘️Instructions
Peel then chop the carrots into slices.
Boil in water for 8 minutes
Drain carrots and tip away water.

☘️Using the same pan to save on washing up, put the carrots back in and throw in the oil.

Cook on a medium heat for 7 minutes.

Add the herbs, salt and pepper.
Add maple syrup (or honey).

Cook the carrots on a medium heat for a further five minutes - they should be soft through the inside and just beginning to brown on the outside when ready. Turn up or lower heat as necessary.

Chocolate treat for you this weekend. Because sometimes you want an easy chocolate dessert that’s made with ingredients you can feel good about!

👉Ingredients:

One peeled and frozen banana
1-2 tsp Cocoa Powder
1 heaping Tb. Peanut Butter
1 Pitted Date
2 Tb. Almond Milk

👉Recipe:
Simply blend the first 5 ingredients until they just come together. Garnish with chocolate chips or chopped peanuts and then enjoy this amazingly, chocolaty treat!

👉If you think eating vegan is boring, think again. Easy to cook vegan dinner recipe Spiced tomato soup with sweet and herby pitas.
👉Ingredients:
For Soup
2 tbsp olive oil, 1 large onion
1 large red pepper (both chopped), 1/2 tsp salt
2 cloves garlic, 1 jalapeño, few ginger pieces
2 tsp. ground coriander, 1 tsp. ground cumin
2 tomatoes (roughly chopped), water, 2 pocket less pitas

For Topping
1 tbsp. brown sugar
2 tbsp. butter or olive oil
2 tbsp. finely shredded unsweetened coconut
2 tbsp. cilantro

👉Make soup:
Heat large oven on medium-flame. Add olive oil, then add onion, red pepper, and salt, and cook, covered, stirring occasionally, until tender, 8 to 10 minutes.

Meanwhile, finely grate garlic, jalapeño, and ginger. Add to onion and cook, stirring, 1 minute.

Stir in ground coriander and ground cumin and cook 1 minute.

Add tomatoes and water; increase heat and simmer, partially covered, 10 minutes.

While tomatoes are cooking, toast 2 pocket less pitas.
Using standard blender, puree soup until smooth.

👉Make topping:
Combine brown sugar in bowl with butter, finely shredded unsweetened coconut, and cilantro. Spread onto toasted pitas, then cut and serve with soup.

☘️Start your day with a diet full on nutrients and proteins. For all vegans here is the new 5 minute vegan recipe.

☘️Ingredients
2 cups Red Delicious apples, chopped
2 cups Bartlett pear, chopped
1 cup canned chickpeas, rinsed and drained
½ cup celery, chopped
½ cup chopped walnuts
½ cup red grapes
⅓ cup unsweetened dried cranberries
½ cup vegan mayonnaise
1 tbsp. dried tarragon leaves
2 tbsp. tarragon wine vinegar
Sea Salt (optional)
Freshly ground black pepper

☘️Combine apples, pears, celery, walnuts, cranberries and grapes in a large serving bowl, set aside.
☘️Combine mayonnaise, tarragon wine vinegar and tarragon leaves in a medium bowl & mix well. Toss with apple mixture and season with sea salt and freshly ground black pepper to taste. Chill before serving. Serve on top of fresh salad greens or on rolls.
