Wine Wednesday is upon us!!!

Today let’s chat about Mauro Molino Barbera d’Alba 2024

Aromas of ripe and sour cherry, wild berries, violets, and fresh herbs. Juicy and medium-bodied on the palate, with vibrant acidity, supple tannins and flavors of cherry, blueberry and red berries. It is fresh, savory and lightly herbal on the finish.

This is a great red wine for pizza/pasta/meats. Particularly...

Pizza with sausage, mushrooms, or prosciutto
Pasta with tomato or meat sauce
Lasagna
Grilled sausages
Burgers
Grilled steak
Braised beef

Capers are the unopened flower buds of the caper bush, a hardy shrub native to the Mediterranean and parts of western Asia.

Capers have a distinctive flavor that’s:
Tangy and salty
Slightly lemony
Mildly floral and peppery

Their flavor comes from compounds that develop after the buds are picked and cured, much like how olives become edible after processing. If they’re packed in salt, it’s common to rinse them before using. Brined capers can also be rinsed if you want a less salty flavor.

Capers are typically used in small amounts to add brightness and depth to dishes. Popular uses include:
Pasta sauces (such as puttanesca)
Chicken or fish dishes (especially piccata)
Salads, including tuna and potato salad
Smoked salmon and bagels
Dressings, aioli, and tartar sauce

This week we’re highlighting Bilo Idro Plavac Mali from Dalmatia, Croatia. This is unlike some powerful, high-alcohol Plavac Malis, and is lighter, fresh, and easy-drinking red, with relatively gentle tannins. Aromas of dark cherry, blueberry, violet and subtle Mediterranean earth. The palate is dry and medium-bodied, showing ripe red and blue fruit, lively acidity, and delicate peppery spice, finishing fresh with earthy-mineral nuances.

Pair with:
Grilled lamb
Grilled sausages and pork
Grilled vegetables such as eggplant, peppers, zucchini, mushrooms
Aged Manchego
Pecorino
Prosciutto and other cured meats
Olives and roasted peppers
Prosciutto and mushroom pizza
Tomato-based pasta with meat or mushrooms
