Steakhouse night at home 🍷🔥

Pan-seared prime ribeye, butter basted and finished with a rich red wine reduction… paired with a 2014 Mount Veeder Cabernet Sauvignon.

Served alongside twice baked potatoes because if you’re going big, you go all the way.

This is exactly why I love pairing wine with intention—structure meets richness, and everything just clicks.

One bottle. Two nights. Two completely different pairings. 🍷

This week I opened a Pinot Noir Blanc from Willamette Valley and built two dinners around it.

Night one went lighter — pan-seared salmon with a white wine butter sauce.

Night two leaned richer — butter-basted chicken with a creamier version of the same sauce.

Same wine, two completely different expressions at the table.

That’s what I love about pairing — it’s not about rules, it’s about understanding how flavors interact.

Breaking the “rules” tonight.

Classic coq au vin is usually paired with Pinot Noir from Burgundy, but tonight I opened a Lodi old vine Zinfandel instead.

With mushrooms, carrots, caramelized onions, and bacon in the braise, the rich sauce actually matched the ripe fruit and peppery spice of the wine surprisingly well.

Sometimes great pairings aren’t about tradition — they’re about finding the bridge between flavors.

So I’m curious…

A surprisingly perfect pairing tonight.

Homemade chicken enchilada soup with a little heat and a 2018 German Riesling (Lieblich) we brought back from Germany.

The slight sweetness and bright acidity of the Riesling cooled the spice and lifted all the flavors in the soup. One of those pairings where the wine actually makes the food taste better.

Sometimes the best wine pairings aren’t the obvious ones.

Dinner tonight 🍷

Filet au poivre with a classic peppercorn cream sauce, served with pommes purée and green beans.

Peppercorn steak calls for a wine with structure and spice, so tonight’s pairing was a 2022 Sans Soleil Syrah from Santa Barbara County.

Syrah works beautifully here — dark fruit, pepper, and savory notes that echo the peppercorn sauce and balance the richness of the filet.

Simple, classic, and one of those dinners that never disappoints.

Pan-seared duck breast with a cherry red wine reduction, served over risotto with broccolini.

Duck and Pinot Noir is one of those classic pairings that always works. The richness of the duck and the sweet acidity of the cherry reduction played beautifully with this 2006 Charmes-Chambertin Grand Cru from Burgundy.

Silky texture, red fruit, and that earthy Burgundian depth that makes Pinot Noir such a perfect partner for duck.

Sometimes the simplest combinations are the most memorable.

Dessert course tonight 🍎🍷

Homemade apple strudel finished with warm vanilla cream and paired with a beautiful 1989 Château Loupiac.

The strudel came out flaky with cinnamon apples and just enough sweetness, and the aged Loupiac brought those classic honey, apricot, and caramel notes that make dessert wines so fun with pastry.

Sometimes the best pairings aren’t complicated — just something warm from the oven and a bottle that’s been patiently waiting for the right moment.

Wine + dessert might be the most underrated pairing there is.

Tonight’s pairing: Chicago-style deep dish pizza with a Hahn GSM.

Blends like GSM (Grenache, Syrah, Mourvèdre) work surprisingly well with tomato-based dishes.

Grenache brings bright fruit, Syrah adds spice and structure, and Mourvèdre contributes depth — which balances the acidity of the tomato sauce and the richness of the cheese.

A great reminder that pizza doesn’t always need beer.

Wine pairing can turn a simple dinner into something memorable.
