So far the feedback on this cake has been amazing and I’m so glad you all enjoyed it!

Vanilla chiffon with strawberry mousse, fresh vanilla mascarpone cream, strawberries tossed in a fresh strawberry compote, and yuzu curd using yuzu puree.

It’s been a while since I’ve made entremets of this caliber and it was a lot of fun! I got to bust out my airbrush gun, temper chocolate, make mirror glaze, and more. I hope to have a chance to make more soon.

There are some people you meet in life that you automatically click with and of THE is the unicorn of friends. We may only see each other twice a year but when we do, it’s the best time. Getting to make her a special cake for her birthday is such an honor.

This cake has everything you could want: decadent chocolate cake with a rich chocolate cremeux, dulce de leche, hazelnut praline crunch, and finished with a not too sweet Swiss meringue buttercream. I might put this on my permanent menu. 👀
