Boiled Fruit Cake Recipe

🧾 Ingredients
2 cups mixed dried fruits (raisins, currants, sultanas, chopped dates)
1 cup water
1 cup sugar (brown sugar preferred)
150g butter or margarine
1 tsp baking soda
2 cups all-purpose flour
1 tsp baking powder
1 tsp mixed spice (or cinnamon + nutmeg)
½ tsp salt
2 eggs
1 tsp vanilla extract

👩‍🍳 Instructions
1. Boil the fruit mixture
In a pot, combine:
dried fruits
water
sugar
butter
Bring to a boil and let it simmer for about 5–10 minutes.
2. Add baking soda
Remove from heat and stir in the baking soda.
(It will foam slightly—that’s normal.)
Let it cool for about 10–15 minutes.
3. Mix dry ingredients
In a bowl, mix:
flour
baking powder
spice
salt
4. Add eggs & vanilla
Once the fruit mixture is warm (not hot), beat in:
eggs
vanilla extract
5. Combine everything
Pour the dry ingredients into the fruit mixture and mix well.
6. Bake
Pour into a greased baking pan
Bake at 160–170°C for 45–60 minutes
Check with a toothpick—it should come out clean.

Something I do in my slow cooker nearly every week….winner winner chicken dinner

Whole chicken straight in, no water, not upside down either.

Crumbled a chicken stock cube on top but you don’t have to. The choice is yours, whatever you like, paprika, lemon, herbs…?

Then I wrap baby potatoes and carrots in foil with a k**b of butter and place it in the slow cooker as well.

Cook on high for 2 hours then turn to low for the rest of the day, (approx 5/6 hrs)

Quick & Easy Fried Version (most like the photo)
Ingredients (serves 4-6):
• 1 fresh pineapple (or 1 can of pineapple rings in juice, well-drained)
• 1 cup all-purpose flour
• 2 tbsp cornstarch (for extra crisp)
• 2 large eggs, beaten
• 1½ cups shredded coconut (sweetened for dessert vibe)
• ½ cup panko breadcrumbs (optional but helps with crunch)
• Vegetable oil for frying
• Maraschino cherries (for topping)
• Optional: pinch of salt, cinnamon, or powdered sugar for dusting
Instructions:
1 Peel, core, and slice fresh pineapple into ½-inch rings (or drain canned ones very well and pat dry — this is key!).
2 Set up 3 bowls:

⅓ cup dried cranberries

2 tbsp fresh parsley, chopped

1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon (optional)
½ cup unsalted butter, melted
¾ cup sugar
2 large eggs
1 teaspoon vanilla extract
1 can (about 1 cup) crushed pineapple, undrained

🍴 Ingredients:
_ 2 tubes Pillsbury Grands! biscuits (blue tubes)
_ 1 can Great Value Cherry Pie Filling (red label)
_ 2 cans Great Value Blueberry Pie Filling (blue and purple)
_ 1 cup Great Value Powdered Sugar (blue and white bag)
_ 2 tbsp milk
_ 1 tsp McCormick Vanilla Extract (brown glass bottle)

1_ Preheat oven to 375°F. Line a baking sheet with parchment paper.
2_ Flatten biscuit dough into circles on a cutting board.
