🧀 Cheesy Beef & Rotini Bake
Ingredients
1 lb (450 g) ground beef
12 oz (340 g) rotini pasta
1 small onion, diced
2–3 cloves garlic, minced
1 bell pepper, diced
1 can (14–15 oz) diced tomatoes, undrained
1 jar (24 oz) marinara or pasta sauce
1 cup frozen corn
1½–2 cups shredded mozzarella
1 cup shredded cheddar
½ cup Parmesan
1 tsp Italian seasoning
1 tsp paprika
½ tsp salt
½ tsp black pepper
Fresh parsley, for topping
1–2 tbsp olive oil
Directions
Cook the pasta: Boil rotini in salted water until just shy of al dente. Drain.
Brown the beef: Heat oil in a large skillet. Add onion and ground beef and cook until browned. Drain excess grease.
Add vegetables: Stir in garlic and bell pepper; cook for 2–3 minutes.
Make the sauce: Add diced tomatoes, marinara, corn, Italian seasoning, paprika, salt, and pepper. Simmer for about 5 minutes.
Combine: Stir the cooked rotini into the beef mixture.
Layer: Pour into a greased 9×13-inch baking dish. Sprinkle mozzarella, cheddar, and Parmesan generously over the top.
Bake: Cover loosely with foil and bake at 375°F (190°C) for 20 minutes. Remove foil and bake another 10–15 minutes, until bubbling and golden.
Finish: Sprinkle with fresh parsley and let it rest for 5–10 minutes before serving.
Tip: For the extra-cheesy, gooey look in the photo, use mozzarella + cheddar, and put a little Parmesan on top during the last 10 minutes of baking. You can also add mushrooms or substitute Italian sausage for some of the beef.
