I am 1 of 30 bloggers competing in the Don Pepino Sauces recipe contest!! The challenge is to use their delicious pizza sauce in unique and creative recipes -- this is my first entry and I nailed it!! These Tomato Cream Mussels with Pancetta and Fennel (and a little KICK!) were so good and broth was insane!! I also put the leftovers on pasta the next day and it was crazy delicious!! 😍😋

One of my all time favorite appetizers - Fried Squash Blossoms Stuffed with Ricotta and Parmesan! I ALWAYS order them if they are on the menu when I go out, but I also love making them at home!!

Fun fact - only the female blossoms on a summer squash or zucchini plant actually make fruit - the male flowers are needed for fertilization, but then they die and fall off the plant!! When you have an excess of male flowers (always leave some for pollinating the female flowers), make these stuffed blossoms - you will thank me later - they are sooo good!!! 😍🌼😋

One of my new favorite chicken dishes - Chicken Spiedini!! Spiedini means ‘skewers’ in Italian. It’s an Italian-inspired dish that is usually made with beef or lamb, but this version uses chicken that’s marinated in olive oil, lemon, garlic, and DotB Ciao Bella Italian spices (dishofftheblock.com/shop). Then it’s breaded, skewered, and baked or grilled. Soooo Good!!! 😍🐔

Who needs Chinese Take Out when you can have Chinese Take IN!! The marinade for the chicken in this stir fry makes the chicken melt in your mouth and the flavors in that sauce are addicting... 😍😋🔥🥢
