• 2 lbs New York Strip Steaks (2 steaks) or Ribeye/Top Sirloin (1 lb each, 1 1/4” thick)
• 1/2 Tbsp vegetable oil (or high-heat oil like canola or extra light olive oil)
• 1 1/2 tsp sea salt
• 1 tsp freshly ground black pepper
For the Butter Sauce:
• 2 Tbsp unsalted butter
• 2 cloves garlic, peeled and quartered
• 1 sprig fresh rosemary

Instructions:
1. Prepare the Steaks:
1. Thoroughly pat the steaks dry with paper towels.
2. Just before cooking, season generously with salt and pepper on all sides.

2. Sear the Steaks:
1. Heat a cast iron skillet over medium-high heat until hot. Add 1/2 Tbsp oil and swirl to coat.
2. Once the oil is shimmering and hot, add the steaks to the skillet.
3. Sear the steaks for 4 minutes on the first side until a golden-brown crust forms. Flip the steaks and cook for another 3-4 minutes on the other side.
4. Using tongs, sear the sides of the steak (about 1 minute per edge) to render and brown the fat.

3. Baste with Butter Sauce:
1. Reduce heat to medium and immediately add:
• 2 Tbsp butter
• Garlic quarters
• Fresh rosemary sprig
2. As the butter melts, tilt the pan and spoon the butter sauce over the steaks continuously for about 1 minute, or until the steak is 5-10°F below your desired doneness.

4. Rest and Serve:
1. Transfer the steaks to a cutting board, loosely cover with foil, and let them rest for 10 minutes.

Indulge in the classic elegance of homemade cream puffs! These airy pastries are filled with a luscious cream filling and dusted with powdered sugar for a delightful dessert.

Ingredients (Servings: 28 Cream Puffs)
For the Choux Pastry:
• 1/2 cup water
• 1/2 cup whole milk
• 8 Tbsp unsalted butter
• 1 tsp granulated sugar
• 1/4 tsp salt
• 1 cup all-purpose flour (measured correctly)
• 4 large eggs (room temperature)
For the Cream Filling and Garnish:
• 2 cups heavy whipping cream (chilled)
• 4 Tbsp granulated sugar
• 1 tsp vanilla extract
• 28 raspberries (optional)
• 1 Tbsp powdered sugar (for garnish)

Instructions:
1. Make the Choux Pastry:
1. Preheat your oven to 425˚F. Line a rimmed baking sheet with parchment paper or a Silpat mat.
2. In a medium saucepan, combine water, milk, butter, sugar, and salt. Bring just to a boil over medium heat, then remove from heat.
3. Add flour all at once and stir vigorously with a wooden spoon until incorporated.
4. Return the pan to medium heat and stir constantly for 1 1/2 to 2 minutes to cook the flour. A thin film will form on the bottom of the pan, and the dough will come together into a smooth ball.
5. Transfer the dough to a large mixing bowl. Beat with an electric mixer on medium speed for 1 minute to cool slightly.

3. Bake at 425˚F for 10 minutes. Without opening the oven, reduce the temperature to 325˚F and bake for another 20-22 minutes until golden brown.
4. Cool the cream puffs completely on a wire rack.

1. In a large mixing bowl, combine the heavy whipping cream, sugar, and vanilla.
2. Beat on medium-high speed until stiff peaks form (about 2 minutes).
3. Transfer the whipped cream to a piping bag fitted with a large open star tip.

• Option 1: Insert the pastry tip into the side of each puff and pipe cream until filled.
• Option 2: Slice off the tops, pipe cream inside, add a raspberry (if desired), and replace the tops.
