Treat yourself to the ultimate steak dinner! This Pan-Seared Steak recipe creates a beautifully caramelized crust and juicy interior. Perfect for a special meal or steak meal prep ideas!
Ingredients (Servings: 4)
For the Steak:
• 2 lbs New York Strip Steaks (2 steaks) or Ribeye/Top Sirloin (1 lb each, 1 1/4” thick)
• 1/2 Tbsp vegetable oil (or high-heat oil like canola or extra light olive oil)
• 1 1/2 tsp sea salt
• 1 tsp freshly ground black pepper
For the Butter Sauce:
• 2 Tbsp unsalted butter
• 2 cloves garlic, peeled and quartered
• 1 sprig fresh rosemary
Instructions:
1. Prepare the Steaks:
1. Thoroughly pat the steaks dry with paper towels.
2. Just before cooking, season generously with salt and pepper on all sides.
2. Sear the Steaks:
1. Heat a cast iron skillet over medium-high heat until hot. Add 1/2 Tbsp oil and swirl to coat.
2. Once the oil is shimmering and hot, add the steaks to the skillet.
3. Sear the steaks for 4 minutes on the first side until a golden-brown crust forms. Flip the steaks and cook for another 3-4 minutes on the other side.
4. Using tongs, sear the sides of the steak (about 1 minute per edge) to render and brown the fat.
3. Baste with Butter Sauce:
1. Reduce heat to medium and immediately add:
• 2 Tbsp butter
• Garlic quarters
• Fresh rosemary sprig
2. As the butter melts, tilt the pan and spoon the butter sauce over the steaks continuously for about 1 minute, or until the steak is 5-10°F below your desired doneness.
4. Rest and Serve:
1. Transfer the steaks to a cutting board, loosely cover with foil, and let them rest for 10 minutes.
2. Slice the steak into 1/2-inch strips and spoon any remaining butter sauce from the skillet over the slices before serving.

1. Steak Bowls: Serve with rice, roasted veggies, and chimichurri sauce.
2. Steak Salad: Toss sliced steak with arugula, cherry tomatoes, avocado, and balsamic vinaigrette.
