🥞✨ Homemade Japanese Soufflé Pancakes
Tall, airy, and ultra-fluffy — these cloud-like pancakes are soft, jiggly, and melt in your mouth.
📝 Ingredients
• 2 large eggs (separated)
• 2 tbsp milk
• ¼ tsp vanilla extract
• ¼ cup (30g) all-purpose flour
• ½ tsp baking powder
• 2 tbsp sugar
• ½ tsp lemon juice or vinegar
• Butter (for cooking)
👩🍳 Instructions
1️⃣ In a bowl, whisk egg yolks, milk, and vanilla.
Sift in flour and baking powder. Mix until smooth.
2️⃣ In a clean bowl, beat egg whites with lemon juice.
Gradually add sugar and whip until stiff, glossy peaks form.
3️⃣ Gently fold one-third of the meringue into the yolk mixture.
Carefully fold in the remaining meringue without deflating.
4️⃣ Heat a non-stick pan over very low heat and lightly butter it.
5️⃣ Spoon tall scoops of batter into the pan.
Add 1 tablespoon of water to the pan (not on the pancakes) and cover with a lid to steam.
6️⃣ Cook 4–5 minutes per side, flipping carefully, until golden and set.
Serve immediately with powdered sugar, fresh berries, maple syrup, or whipped cream.
