Mango Coconut Milk Soft Morning Cake
Mango and coconut milk is the tropical combination that is everywhere on summer baking feeds right now. This cake bakes up golden and fragrant with a moist crumb that practically melts and every slice tastes like the best slow morning of the year.
Ingredients:
- 1 cup ripe mango, finely diced
- 2 eggs
- 3/4 cup sugar
- 1 cup coconut milk
- 1/3 cup oil
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking powder
- Pinch of salt
Methods:
1. Preheat oven to 350 F and grease a 9-inch round pan.
2. Whisk eggs, sugar, coconut milk, oil, and vanilla.
3. Stir flour, baking powder, and salt and fold in.
4. Toss mango in 1 tbsp flour and fold into batter.
5. Pour into pan.
6. Bake 34 to 40 minutes until golden and set.
7. Cool before slicing.
