God love her! Bailey had a procedure on the toenails on both of her back feet today, so now she’s rocking two little bandaged feet and being an absolute drama queen!

Mama has been instructed to keep her off those feet as much as possible for the next 48 hours…which obviously means I’ll be carrying her everywhere like the tiny princess she is.

And honestly, I am here for it! Send my sweet girl some love!

I basically LIVED in my kitchen this weekend! 👩‍🍳

It was a HUGE recipe testing weekend! I tested BBQ Baked Beans, Indian Spiced Chicken and Squash, Chipotle Chicken Bowls, Spicy Peanut Chicken and Broccoli, Penicillin Soup, Chicken Pozole, Hot Honey Pork Tenderloin with Veggies… and that’s just naming a few!

My kitchen was a disaster, my fridge is packed with leftovers, and I feel like I cooked enough food to feed a small army 😂 But it was SUCH a productive weekend!

I only have ONE WEEK LEFT of recipe testing for this book!! I can finally see the finish line and I am SO excited!!

Rosemary Focaccia Bread
There is nothing quite like the smell of homemade bread baking in the oven, and this Rosemary Focaccia Bread makes the entire house smell HEAVENLY!

If making homemade bread intimidates you, this is a great recipe to start with. The ingredients are simple, the mixer does most of the work, and you only need to let the dough rise once before spreading it into your baking dish. No complicated shaping or bread-making skills required!

Ingredients
For the Dough
• 1 packet active dry yeast
• 1 1/2 cups warm water
• 2 teaspoons granulated sugar
• 1/4 cup olive oil
• 2 1/2 teaspoons salt
• 1 tablespoon rosemary
• 1 teaspoon garlic powder
• 3 1/2 cups all-purpose flour
• Additional olive oil, for coating the dough and baking dish
For the Topping
• Olive oil
• 3/4 teaspoon salt
• Additional rosemary, to taste

Directions
1 Add the active dry yeast, warm water, sugar, and 1/4 cup olive oil to the bowl of a stand mixer.
2 Give everything a gentle stir and allow the yeast to bloom for 5 to 10 minutes. You'll know it's ready when the mixture becomes frothy on top and starts smelling like a bakery!
3 Add the salt, rosemary, garlic powder, and all-purpose flour to the yeast mixture.
4 Using the dough hook attachment, mix the dough on medium-high speed for about 5 minutes, or until the ingredients are well combined and a soft dough has formed.
5 Coat the dough with olive oil. Cover the bowl and allow the dough to rise in a warm place for 40 minutes to 1 hour, or until it has noticeably increased in size.
6 Preheat the oven to 375°F.
7 Generously coat the bottom of a 9x13-inch baking dish with olive oil.
8 Transfer the risen dough to the prepared baking dish and gently stretch and spread it out to fit the pan.
9 Use your fingertips to press down into the dough, creating those classic little focaccia crevices all over the surface.
10 Drizzle additional olive oil generously over the top, allowing some of it to settle into the crevices.
11 Sprinkle the top with 3/4 teaspoon salt and additional rosemary.
12 Bake at 375°F for approximately 40 minutes, or until the focaccia is beautifully golden brown and cooked through.
13 Allow the bread to cool slightly before slicing and serving.

Another busy day in the kitchen! 👩‍🍳

I knocked out 3 recipe testings for Matthew today: BBQ Burnt Ends, Teriyaki Chicken, and Penicillin Soup! Then I switched gears and filmed my Chicken and Dumplings!

And y’all… those BBQ Burnt Ends absolutely LIT MY WORLD ON FIRE! 🔥🔥🔥 I could not stop eating them. They were hands down the star of the day!

Recipe testing days are always a little chaotic, but I love getting in the kitchen, making a mess, and seeing what turns out amazing! Now I just need somebody to come do these dishes. 😂
