As a toddler, mom, some days are just more exhausting… so sometimes I need an easy weeknight dinner. And when I say easy, I mean EASY! This 5-ingredient recipe took 15 minutes to make. I used gluten-free chicken tenders to make this a gluten-free dinner.

5 ingredient pickle Caesar salad recipe
Gluten free

Ingredients:
- 2 cups of kale (chopped and massaged with Graza olive oil, salt and pepper)
- 1/2 bag gluten free chicken tenders (I used CAULIPOWER pickle flavored!)
- 3-4 tbsp of pickle de gallo Grillo's Pickles
- 2 tbsp Caesar salad dressing Ken's Steak House Dressings
- 1 tbsp Parmesan cheese

As a work-from-home mom to a toddler, I’ve learned lunch needs to be literally as quick and as easy as possible. Truly, the easier the better in my opinion!

This 4-ingredient lunch idea is made with all Trader Joe’s ingredients. I love shopping at Trader Joe’s, and anything Caesar salad based is one a favorite!

2-ingredient Caesar chicken salad
Gluten free, nut free

Ingredients:
1 package of rotisserie chicken
1 Caesar salad dip

Directions:
1. Mix it all together.
2. Serve with lettuce and toasted gluten free baguette slices.

This one has always been my favorite go to for an easy weeknight dinner!

This Dijon Mustard Salmon is made in less than 30 minutes, in one pan and has a simple 3-ingredient sauce! It tastes like a fancy dish from my favorite takeout place, but without the hefty price tag.

The one and ONLY Dijon Mustard is my favorite secret to making an everyday dish a little more elevated! It is crafted with white wine for smooth, balanced depth in every spoonful.

Dijon Mustard Salmon Recipe
Gluten free, dairy free

Ingredients:
1 salmon filet
1 bag of spinach
½ cup feta cheese

3-Ingredient Sauce:
1 cup coconut milk
3 tbsp Dijon Mustard
1-2 tbsp honey
Optional: Salt, pepper, garlic to taste

Directions:
Add a little olive oil to a pan and sear the salmon on medium high until it’s golden. Remove from the pan and set aside.
Whisk together the coconut milk, Dijon and honey. Pour the sauce into the same pan.
Add the spinach. Cook on medium low for 5 minutes until the sauce is thick and the spinach is wilted.
Add the filets back to the pan and top each filet with crumbled feta and serve.

I needed a quick and easy dinner idea before vacation that was made with only a few ingredients and didn’t create a ton of leftovers to get old in the fridge while we were away. This weeknight dinner recipe is easy to make, a one pan recipe and made in 50 minutes.

This is a gluten free dinner as long as your lasagna noodles are gluten free like mine. I used Barilla gluten free noodles but any gluten free lasagna noodles will work.

Buy whatever sauce is on sale to save money! This sheet pan lasagna is made with a cacio e pepe sauce but any jar of alfredo sauce works!

- Gluten free lasagna noodles
- Cacio e pepe or alfredo sauce
- Fresh spinach
- Ricotta
- Fresh mozzarella
- optional: chicken and gluten free breadcrumbs for cutlet topping
