Shrimp Tacos with Pineapple Salsa

For the Shrimp

* Jumbo shrimp — I use about 6 shrimp for every 2 tacos
* Olive oil
* Salt
* Pepper
* Small corn tortillas
* Pickled red onions, homemade or store-bought

Remove the shells from the shrimp and devein them if desired. Toss with olive oil, salt, and pepper.

Thread the shrimp onto metal skewers and grill until cooked through.

Pineapple Salsa

* About ½ cup diced fresh pineapple
* About 2 tablespoons finely diced red onion
* Juice of 1 very juicy lime
* ½ jalapeño, finely diced
* About 1 tablespoon chopped fresh cilantro
* Salt, to taste

Combine the pineapple, red onion, lime juice, jalapeƱo, cilantro, and salt. Mix well and adjust any of the ingredients to taste.

To Assemble

Warm the corn tortillas, then add the grilled shrimp. Spoon the pineapple salsa over the top and finish with pickled red onions.

* 1 tsp baking powder
* 1/2 tsp baking soda
* 1 tsp salt
* 1 carton fresh raspberries, lightly tossed with 1-2 tbsp flour

Lemon Cream Cheese Frosting

* 1/2 cup butter, softened
* 8 oz cream cheese, softened
* 4 1/2 cups powdered sugar
* 2 tbsp fresh lemon juice
* 1 tsp lemon zest

1. Heat oven to 350°F. Grease 2 (8-inch) cake pans.
2. Whisk together oil, eggs, buttermilk, lemon juice, and zest.
3. Stir together sugar, flour, baking powder, baking soda, and salt. Fold into wet ingredients just until combined.
4. Gently fold in floured raspberries.
5. Bake 28-34 minutes, until a toothpick comes out clean. Cool completely.

Frosting

1. Beat butter and cream cheese until fluffy (4-5 minutes).
2. Beat in powdered sugar, lemon juice, and zest until smooth.
