🧄🍤 Recipe: Udon Stir Fry with Shrimp & Mini Fusion Happy Roots Sauce
Serves: 2-4 | Time: 20 minutes
Ingredients:
1) 1 tablespoon oil (avocado or sesame works great)
2) 2 garlic cloves, minced
3) 1/2 pound large shrimp (peeled and deveined)
3) 1-3 pack fresh or frozen udon noodles
4) 1 cup mixed stir-fry veggies (bell peppers, cabbage, carrots, mushrooms or your choice)
5) 3 tablespoons Mini Fusion Happy Roots sauce
Optional: Green onions, sesame seeds, chili flakes, lime wedges for garnish
Instructions:
1) Cook the noodles according to package instructions. Drain and set aside.
2) Sauté garlic in oil over medium heat until fragrant (about 30 seconds).
3) Toss in your veggies and stir-fry for 2–3 minutes until just tender.
4) Add shrimp and cook until pink and slightly golden (2–3 mins per side).
5) Add cooked udon noodles and pour in the Mini Fusion Happy Roots sauce. Toss everything together to coat evenly.
Serve hot and top with green onions, sesame seeds, or a squeeze of lime for extra flavor!
