Brown Sugar and Cinnamon Carrots, Roasted to Perfection 🥕🍬🍂

Ingredients:
10 medium carrots, peeled
2 tablespoons olive oil
3 tablespoons brown sugar
1/2 teaspoon ground cinnamon
Salt and pepper
A little parsley for garnish

Directions:
Preheat your oven to 400°F (200°C).
Toss the carrots with olive oil, brown sugar, cinnamon, salt, and pepper until well coated.
Spread the carrots in a single layer on a baking sheet.
Roast for about 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized.
Transfer to a serving platter and sprinkle with parsley for a fresh finish.

Ingredients:
6 medium carrots, peeled and halved lengthwise
2 tablespoons olive oil
1 teaspoon ground cumin
Salt and pepper
1/4 cup crumbled feta cheese
A little parsley for garnish

Directions:
Preheat your oven to 400°F (200°C).
Toss the carrots with olive oil, ground cumin, salt, and pepper in a mixing bowl.

Cranberry and Goat Cheese Orzo Salad 💕📝

Ingredients:
1 cup orzo pasta (200g)
2 cups baby spinach, chopped (60g)
1/3 cup dried cranberries (50g)
1/4 cup goat cheese, crumbled (60g)
1/4 cup slivered almonds, toasted (30g)
2 tbsp olive oil (30ml)
1 tbsp balsamic vinegar (15ml)
1 tbsp lemon juice (15ml)
1 clove garlic, minced
Salt and pepper to taste

Directions:
Cook orzo according to package instructions, then drain and let cool slightly.
Whisk olive oil, balsamic vinegar, lemon juice, garlic, salt, and pepper in a small bowl.
Combine cooked orzo, spinach, cranberries, and almonds in a large bowl.
Drizzle with dressing and toss gently to combine.
Top with crumbled goat cheese and serve.

Sweet Chili Chicken and Green Bean Foil Packets 💕📝

Ingredients:
2 chicken breasts (170g each)
1 cup green beans (150g)
1 cup bell peppers (150g)
1 cup baby potatoes (200g)
1/4 cup sweet chili sauce (60ml)
1 tbsp soy sauce (15ml)
2 cloves garlic, minced
1 tbsp olive oil (15ml)
1/2 tsp salt
1/4 tsp black pepper
1 tbsp parsley, chopped

Directions:
Preheat grill or oven to 400°F (200°C).
Toss diced potatoes with olive oil, salt, and pepper.
Mix sweet chili sauce, soy sauce, and garlic.
Place chicken on foil, add veggies and potatoes around it.
Drizzle with sauce and seal the foil.
Cook for 25-30 minutes.

Ingredients:
Extra Firm Tofu – 14 oz (400g), cut into cubes
Red Bell Pepper – 1 medium (150g), diced
Yellow Bell Pepper – 1 medium (150g), diced
Honey – 2 tablespoons (30ml)
Soy Sauce – 2 tablespoons (30ml)
Garlic – 2 cloves, minced
Olive Oil – 1 tablespoon (15ml)
Black Pepper – 1/4 teaspoon (1g)
Fresh Parsley – for garnish

Directions:
Preheat your grill or oven to 375°F (190°C).
Prepare four sheets of aluminum foil and lightly grease them with olive oil.
In a bowl, whisk together honey, soy sauce, minced garlic, and black pepper.
Toss the tofu cubes in the sauce to coat evenly.
Divide the tofu, red bell pepper, and yellow bell pepper among the foil sheets.

Chicken Breasts – 4 pieces (about 680g)
Mango – 2 cups, diced (300g)
Red Bell Pepper – 1 large, chopped (150g)
BBQ Sauce – 1/2 cup (120ml)
Olive Oil – 1 tablespoon (15ml)
Salt – 1/2 teaspoon (2.5g)
Black Pepper – 1/4 teaspoon (1g)
Fresh Parsley – for garnish

Directions:
Preheat your grill or oven to 375°F (190°C).
Lay out four sheets of aluminum foil and lightly grease each with olive oil.
Season the chicken breasts with salt and black pepper, then place one in the center of each foil sheet.
