Pasta Salad with Cherry Tomatoes and Mozzarella

Ingredients

250 g pasta
200 g cherry tomatoes
125 g mozzarella
2 tbsp pesto
A few basil leaves
1 handful of arugula
1 tbsp olive oil
Salt and pepper, to taste

Preparation

Cook the pasta in a large pot of salted boiling water according to the package instructions. Drain it, then rinse under cold water to cool it down quickly.

Cut the cherry tomatoes in half. Drain the mozzarella and cut it into smaller pieces if needed.

Place the cooled pasta in a large salad bowl. Add the cherry tomatoes, mozzarella, pesto, olive oil, basil leaves, and arugula.

Season with salt and pepper. Add a little lemon juice or balsamic vinegar if you want extra freshness.

This is the creamy pasta recipe that tastes like it came straight from your favorite Italian restaurant, but it’s made in your own kitchen in less than 30 minutes. Rich, silky, garlicky, and full of flavor… this penne alla vodka is pure comfort in a bowl.

You will need:

12 oz penne pasta
2 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1/2 cup tomato paste
1/4 cup vodka
1 cup heavy cream
1/2 cup grated parmesan cheese
1/2 tsp red pepper flakes
Salt and black pepper, to taste
Fresh basil, for garnish

Cook the penne in salted boiling water until al dente. Save 1 cup of pasta water, then drain.

In a large pan, heat olive oil over medium heat. Add the onion and cook until soft.

Add the garlic and red pepper flakes. Stir for about 30 seconds until fragrant.

Add the tomato paste and cook for 2–3 minutes, stirring often, until it deepens in color.

Pour in the vodka and let it simmer for 2 minutes so the flavor blends into the sauce.

Lower the heat and stir in the heavy cream until the sauce becomes smooth and creamy.

Add parmesan cheese, salt, and pepper. Stir until melted.

Add the cooked penne and toss until fully coated. Add a splash of pasta water if the sauce needs loosening.
