🍓 RASPBERRY CREAM TARTLETS
🥧 For the Tart Shells
• 200 g all-purpose flour
• 100 g unsalted butter, cold & cubed
• 60 g powdered sugar
• 1 egg yolk
• 1 tsp vanilla extract
• 1–2 tbsp cold water, if needed
• Pinch of salt
🍓 For the Raspberry Filling
• 250 g fresh or frozen raspberries
• 60 g sugar
• 1 tbsp lemon juice
• 1 tbsp cornstarch
• 1 tbsp water
🤍 For the Cream
• 200 ml heavy whipping cream
• 30 g powdered sugar
• ½ tsp vanilla extract
✨ For Topping
• Fresh raspberries
• Powdered sugar, optional
👩🍳 Instructions
1️⃣ Mix flour, powdered sugar, and salt. Rub in the cold butter until the mixture resembles fine crumbs.
2️⃣ Add egg yolk and vanilla. Mix until a dough forms, adding cold water if needed.
3️⃣ Wrap and chill for 30 minutes.
4️⃣ Roll out the dough and press into small tartlet molds. Trim the edges and prick the bases with a fork.
5️⃣ Bake at 350°F (180°C) for 15–18 minutes, or until lightly golden. Cool completely.
6️⃣ Cook raspberries, sugar, and lemon juice over medium heat until softened. Mix cornstarch with water, stir it in, and cook until thickened. Let cool.
7️⃣ Whip heavy cream, powdered sugar, and vanilla until stiff peaks form.
8️⃣ Spoon the raspberry filling into each cooled tart shell.
9️⃣ Pipe a generous swirl of whipped cream on top and finish with a fresh raspberry.
