This recipe uses simple ingredients and melted chocolate for dipping.
📋 Ingredients
Cookie Dough:
* 250 g low-protein flour (cake flour)
* 150 g margarine
* 50 g butter
* 80 g powdered sugar (icing sugar)
* 1 egg yolk
* 25 g cornstarch
* 20 g milk powder
* ½ tsp vanilla extract
* 1 pinch salt
Chocolate Dip:
* 200 g Dark Cooking Chocolate (DCC)
* 1 tsp vegetable oil (optional, to thin out the chocolate if needed)
Optional Toppings:
* Melted white chocolate
* Chocolate sprinkles (meses)
* Chopped roasted nuts
* Colorful sprinkles
🍳 Step-by-Step Instructions
* Cream the Fat and Sugar:
Combine the margarine, butter, and powdered sugar in a bowl. Beat using a mixer on low speed for about 1–2 minutes until well combined. Do not overmix or cream until fluffy.
* Add the Egg Yolk:
Add the egg yolk and vanilla extract. Mix until completely combined.
* Incorporate Dry Ingredients:
Sift the low-protein flour, cornstarch, and milk powder together. Add them gradually to the wet mixture along with the salt. Stir gently using a spatula until a smooth, pliable dough forms.
* Shape the Cookies:
Transfer the dough into a piping bag fitted with a star tip. Pipe long logs, rounds, or your preferred shapes onto a baking tray lined with parchment paper.
(If you don't have a piping tip, you can shape the dough by hand).
* Bake:
Preheat your oven to 150–160°C (300–320°F).
Bake for 20–30 minutes, depending on the size of the cookies and your oven. The cookies are done when the bottoms are light golden brown and dry to the touch. Remove from the oven and let them cool completely.
* Melt the Chocolate:
Chop the dark cooking chocolate into small pieces. Melt using the double-boiler method (a heatproof bowl set over a pot of simmering water—ensure the bottom of the bowl does not touch the water). Stir until smooth. Add a little vegetable oil if the chocolate is too thick.
> Note: Make sure no water or steam gets into the chocolate, as it will cause the chocolate to seize up.
>
* Dip the Cookies:
Dip half of each cooled cookie into the melted chocolate. Gently lift it out and allow the excess chocolate to drip back into the bowl.
* Add Toppings:
Before the chocolate sets, sprinkle with chocolate sprinkles, chopped nuts, or colorful sprinkles. For an elegant touch, drizzle thin lines of melted white chocolate across the dipped portion.
* Set the Chocolate:
Arrange the cookies on a sheet of parchment paper. Let them sit in a cool room until the chocolate hardens completely. If the room is warm, chill them in the refrigerator for 5–10 minutes.
💡 Tips for Crispy and Beautiful Cookies
* Flour Choice: Use low-protein (cake) flour to ensure the cookies turn out crispy rather than tough or hard.
* Don't Overbeat: Avoid over-mixing the margarine and sugar mixture; this prevents the piped cookies from spreading and losing their shape during baking.
* Cool Completely: Ensure the cookies are completely cool before dipping them in warm chocolate.
* Neat Dipping: Use a narrow, slightly deep glass or cup for the melted chocolate to get a clean, deep dip.
* Storage: Store the cookies in an airtight container once the chocolate has set completely.
