• 5 tablespoons unsalted butter, melted (70 g)
• 24 oz cream cheese, softened (680 g)
• 1 cup granulated sugar (200 g)
• ¾ cup sour cream (180 g)
• 3 large eggs, room temperature
• 2 teaspoons vanilla extract
• 2 tablespoons all-purpose flour (16 g)
• ¼ teaspoon salt
• ½ cup crushed pineapple, very well drained (120 g)
• 1 tablespoon pineapple juice
For the raspberry layer:
• 1½ cups fresh or frozen raspberries (185 g)
• ¼ cup granulated sugar (50 g)
• 1 tablespoon cornstarch (8 g)
• 1 tablespoon lemon juice (15 ml)
For the crumble topping:
• ¾ cup all-purpose flour (90 g)
• ½ cup brown sugar, packed (100 g)
• ½ cup quick oats (45 g)
• 6 tablespoons unsalted butter, melted (85 g)
• ¼ teaspoon salt
For decorating:
• Whipped cream
• Fresh raspberries
• Thin pineapple pieces or dried pineapple
• Extra crumble
How to make it:
Preheat your oven to 325°F (165°C). Line the bottom of a 9-inch springform pan with parchment paper.
Combine the graham cracker crumbs and melted butter. Press firmly into the bottom of the pan and bake for 8–10 minutes. Let cool slightly.
Beat the cream cheese and sugar until completely smooth. Add the sour cream, vanilla, flour, and salt.
Beat in the eggs one at a time on low speed, just until incorporated. Fold in the well-drained crushed pineapple.
For the raspberry layer, combine raspberries, sugar, cornstarch, and lemon juice in a small saucepan. Cook over medium heat for 5–7 minutes, stirring gently, until thickened. Cool slightly.
Pour half of the cheesecake filling over the crust. Spoon small dollops of raspberry sauce over it and gently swirl with a knife. Add the remaining cheesecake filling and repeat with a little more raspberry sauce.
For the crumble, mix flour, brown sugar, oats, salt, and melted butter until chunky crumbs form. Sprinkle generously over the cheesecake.
Bake for 60–70 minutes, until the edges are set and the center still has a slight wobble. Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour.
Refrigerate for at least 6 hours, preferably overnight. Carefully remove the springform ring once completely chilled.
Decorate with fluffy whipped cream, fresh raspberries, pineapple pieces, and extra golden crumble. For the bakery-style finish, pipe a generous cream swirl onto each serving.
Serve chilled for a creamy, fruity bite with that buttery golden crunch on top. 🍍❤️
