Ingredients

4 1/2 tbsp unsalted butter, sliced

1 cup (95g) quick oats
1 1/4 cup (165g) all-purpose flour
1/2 tsp baking powder
1/2 tsp kosher salt
1/2 cup (110g) unsalted butter, room temp
1 cup (210g) dark brown sugar, packed
1 large egg + 1 egg yolk
2 tsp vanilla extract
1/2 cup (85g) semisweet chocolate chips
3/4 cup (130g) dark chocolate chips
3/4 cup (95g) walnuts or pecans, finely chopped (optional)
Flaky sea salt, for sprinkling
Instructions
Make the Salted Caramel:
Prep Your Ingredients: Gather all your ingredients for the caramel. Itâs important to have everything ready because youâll need to work quickly once you start cooking. Ensure your heavy cream is at room temperature.
In a heavy-bottomed saucepan, add the sugar and water. Stir gently to mix, but donât touch it again! Place it over medium heat and watch it bubble away.
Once the mixture turns clear and bubbly, keep an eye on it as it transitions to a lovely amber color. When itâs ready, take it off the heat and whisk in the butter.

Cool and Slice:
Let the bars cool at room temperature for about 30 minutes, then refrigerate for about an hour. When ready, lift them out of the pan, sprinkle with flaky sea salt, slice, and enjoy!
