🥭🎂⭐ No-Bake Mango Cheesecake🌟😋☀️
This No-Bake Mango Cheesecake is creamy, tropical, and packed with fresh mango flavor in every bite ✨ With a rich chocolate cookie crust, silky mango cheesecake filling, and glossy mango topping, this bakery-style dessert feels light, refreshing, and absolutely irresistible.🌟
Ingredients:
🍪 For the Chocolate Cookie Crust
• 2 1/2 cups Oreo crumbs
• 7 tbsp unsalted butter, melted
🧀 For the Mango Cheesecake Filling
• 16 oz cream cheese, softened
• 1 cup heavy whipping cream, cold
• 3/4 cup powdered sugar
• 1 cup mango puree
• 1 tsp vanilla extract
• 1 tbsp unflavored gelatin, dissolved
🥭 For the Mango Glaze
• 3/4 cup mango puree
• 2 tbsp granulated sugar
• 1 tsp unflavored gelatin
✨ For Topping
• Fresh mango chunks
• Chia seeds for garnish
How to make it:
1️⃣ Prepare the crust
Crush the Oreos into fine crumbs.
Mix with melted butter until the texture looks like wet sand.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Refrigerate for 20 minutes until firm.
2️⃣ Make the mango cheesecake filling
In a large bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
Add the mango puree and mix well.
In another bowl, whip the heavy cream until soft peaks form.
Fold the whipped cream gently into the mango mixture.
Stir in the dissolved gelatin.
Pour the filling over the chilled crust and smooth the top.
3️⃣ Chill
Refrigerate the cheesecake for at least 6 hours or overnight until fully set.
4️⃣ Prepare the mango glaze
Heat the mango puree and sugar in a small saucepan until warm.
Mix in the gelatin until dissolved and smooth.
Let it cool slightly before pouring it over the cheesecake.
Return to the fridge for 30 minutes to set the glaze.
5️⃣ Decorate
Top with fresh mango chunks and sprinkle with chia seeds for that beautiful tropical finish 🥭
