📖 LES INGRÉDIENTS

(Pour 4 personnes)

Pour la base du tajine :

6 figues fraîches (mûres mais fermes, coupées en deux)

2 courgettes (coupées en tronçons ou demi-lunes épaisses)

250g de pois chiches (cuits ou en conserve, rincés et égouttés)

1 grand oignon rouge (émincé)

2 gousses d'ail (pressées)

1 cuillère à soupe de miel de fleur

1 cuillère à café d'eau de fleur d'oranger

2 cuillères à soupe d'huile d'olive extra-vierge

300ml de bouillon de légumes

Le mélange d'épices (Ras el Hanout doux) :

1 cuillère à café de gingembre en poudre

1 cuillère à café de cannelle en poudre

1 cuillère à café de curcuma

1/2 cuillère à café de cumin

Quelques pistils de safran (infusés dans un peu d'eau chaude)

Fleur de sel & poivre noir du moulin

Pour la finition croquante :

30g d'amandes effilées ou entières (émondées et dorées à la poêle)

Quelques brins de coriandre fraîche

👩‍🍳 LA PRÉPARATION

La base aromatique : Dans un tajine en terre cuite (ou une cocotte à fond épais), faites chauffer l'huile d’olive. Faites suer l'oignon rouge et l'ail pendant 5 minutes à feu doux jusqu'à ce qu'ils deviennent translucides.

L'enrobage des épices : Ajoutez le gingembre, la cannelle, le curcuma, le cumin et le safran infusé. Mélangez bien pendant 1 minute pour réveiller toutes les effluves des épices.

Le mijoté de légumes : Incorporez les tronçons de courgettes et les pois chiches. Arrosez avec le bouillon de légumes, salez et poivrez. Couvrez le tajine et laissez mijoter à feu doux pendant 20 minutes.

La touche sucrée & les figues : Ajoutez le miel et l'eau de fleur d'oranger dans le jus de cuisson. Disposez délicatement les demi-figues fraîches sur le dessus des légumes (côté chair vers le haut pour qu'elles restent entières). Couvrez à nouveau et laissez confire à feu très doux pendant 10 minutes.

For the meringue:
3 egg whites
150g sugar

For decoration:
Lemon slices
Edible flowers

Preparation steps:
1. Preheat the oven to 180°C (350°F). Whisk together the eggs, sugar, and zest. Add the flour.

2. Spread the batter onto a baking sheet lined with parchment paper. Bake for 10 minutes.

3. Roll up the sponge in a damp tea towel. Let it cool.

4. For the cream, heat the juice, zest, and sugar. Add the egg yolks and cornstarch. Thicken, then remove from heat and stir in the butter.

5. Unroll the sponge cake. Spread the lemon cream over the cake. Roll it up.

6. Beat the egg whites until stiff peaks form, gradually adding the sugar. Cover the roulade.
