Ingredients
1 sheet puff pastry
1 cup shredded mozzarella cheese
½ cup cheddar cheese, shredded
½ cup sweet corn
1 small red bell pepper, finely diced

Baked Stuffed Potato with Ground Beef

Tender potato slices wrapped around a savory ground beef and onion filling, then baked with butter until golden and delicious. This comforting dish is hearty, simple, and perfect for a cozy family dinner.

Ingredients
4 large potatoes, peeled
1 1/2 pounds ground beef
1 small onion, thinly sliced
3 garlic cloves, minced
2 tablespoons butter
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon Italian seasoning
1/2 teaspoon black pepper
1 teaspoon salt
1/2 cup shredded mozzarella cheese
1/4 cup beef broth
Fresh dill or parsley, for garnish
Instructions
Prepare the potatoes: Peel the potatoes and slice them lengthwise into very thin, even slices. Keep the slices flexible enough to fold without breaking.
Prepare the filling: Heat the olive oil in a skillet over medium heat. Add the sliced onion and cook until softened. Add the minced garlic and cook for another minute.
Cook the beef: Add the ground beef and cook until browned and fully cooked. Season with salt, black pepper, paprika, and Italian seasoning. Stir well and remove from the heat.
Assemble: Place a layer of potato slices in a lightly greased baking dish, slightly overlapping them. Spoon the seasoned beef mixture over the potatoes, then arrange additional potato slices around and over the filling.
Add the butter: Dot the top with small pieces of butter and pour the beef broth around the edges of the dish.
Bake: Cover tightly with foil and bake at 375°F (190°C) for about 40 minutes, or until the potatoes are tender. Remove the foil and sprinkle the mozzarella cheese over the top.
Finish baking: Return the dish to the oven and bake uncovered for another 10–15 minutes, until the cheese is melted and golden and the potatoes have lightly browned.
Garnish and serve: Let it rest for a few minutes, then sprinkle with fresh dill or parsley. Serve warm with the buttery beef juices spooned over the top.

Chicken Alfredo Tater Tot Casserole

This Chicken Alfredo Tater Tot Casserole is creamy, cheesy, and loaded with tender chicken under a blanket of golden, crispy tater tots. It’s an easy comfort-food dinner that comes together with simple ingredients and is perfect for busy weeknights or feeding the whole family.

Ingredients:

Filling:
4 cups chopped chicken (I used rotisserie)
1 15 oz jar Alfredo sauce
1/3 of the Alfredo jar filled with milk, shaken to get the rest of the sauce
1/2 cup sour cream
1 tbsp minced garlic
1 tsp all purpose seasoning
1 tsp onion powder
1 tsp Italian seasoning
1 tsp Kinders Buttery Garlic and Herb
Black pepper, to taste

Cheese:
1 cup shredded mozzarella
1/2 cup shredded Parmesan

Topping:
1 bag frozen Tater Tots

Instructions:

1. Prepare the oven: Preheat your oven to 375°F. Lightly spray a 13x9-inch baking dish with cooking spray.

2. Make the filling: Add the chopped chicken, Alfredo sauce, milk, sour cream, minced garlic, all purpose seasoning, onion powder, Italian seasoning, Kinders Buttery Garlic and Herb, and black pepper to a large bowl.

3. Mix everything: Stir the filling thoroughly until the chicken is evenly coated and all of the seasonings are well distributed.

4. Fill the baking dish: Transfer the chicken Alfredo mixture to the prepared 13x9-inch baking dish. Spread it out evenly across the bottom.

5. Add the cheese: Sprinkle the shredded mozzarella and Parmesan evenly over the entire chicken mixture.

6. Add the Tater Tots: Arrange the frozen Tater Tots in a single layer over the cheese, covering the casserole completely.

7. Bake: Place the casserole in the preheated oven and bake for 45–50 minutes, or until the Tater Tots are golden brown and crispy and the filling is hot and bubbling.

8. Check the topping: Start checking the casserole around the 40-minute mark to make sure the Tater Tots aren't browning too quickly. If needed, loosely cover the top with foil for the remaining baking time.

9. Rest and serve: Remove the casserole from the oven and let it rest for about 5 minutes before serving. Spoon out the creamy chicken Alfredo filling with plenty of crispy Tater Tots on top.
