• 2 cups granulated sugar
• ¾ cup unsweetened cocoa powder
• 1 ½ tsp baking powder
• 1 ½ tsp baking soda
• 1 tsp salt
• 2 large eggs
• 1 cup whole milk
• ½ cup vegetable oil
• 2 tsp vanilla extract
• 1 cup boiling water



🍰 Instructions

1️⃣ Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper.

2️⃣ Mix dry ingredients:
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

3️⃣ Add wet ingredients:
Stir in eggs, milk, oil, and vanilla extract. Beat until smooth and well combined.

4️⃣ Incorporate boiling water:
Gradually add boiling water, stirring gently — the batter will be thin, which ensures a moist cake.

5️⃣ Bake:
Pour the batter into the prepared pan. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

6️⃣ Cool:
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before adding layers or frosting.

🧁 Ingredients

For the Chocolate Cake:
• 2 cups all-purpose flour
• 1 ¾ cups granulated sugar
• ¾ cup unsweetened cocoa powder
• 2 teaspoons baking soda
• 1 tsp baking powder
• ½ tsp salt
• 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar, let sit 5 minutes)
• ½ cup vegetable oil
• 2 large eggs

For the Strawberry Filling (suggested):
• 2 cups fresh or frozen strawberries, hulled and chopped
• ½ cup granulated sugar
• 1 tsp lemon juice
• 1 tbsp cornstarch (optional, for thickening)

🍽️ Ingredients
For the chocolate sponge cake:
• 4 large eggs (room temperature)
• 100 g (½ cup) granulated sugar
• 2 tbsp milk
• 60 g (½ cup) all-purpose flour
• 30 g (¼ cup) unsweetened cocoa powder
• ½ tsp baking powder
• Pinch of salt
• 1 tsp vanilla extract (optional)

For the cream filling:
• 200 ml (¾ cup + 1 tbsp) cold heavy whipping cream
• 2–3 tbsp powdered sugar (to taste)
• 1 tsp vanilla extract

For the ganache topping:
• 120 g (4 oz) dark or semi-sweet chocolate, chopped
• 120 ml (½ cup) heavy cream
• 1 tbsp butter (optional, for shine)

👩‍🍳 Instructions
1. Make the sponge cake
1 Preheat oven to 175°C / 350°F. Line a 25x35 cm (10x14 inch) jelly roll or baking tray with parchment paper.
2 In a large bowl, beat eggs and sugar with an electric mixer until light, pale, and fluffy (about 5–6 minutes).
3 Add milk and vanilla. Mix gently.

3 Stir in butter if desired.

6. Finish the roll

For the Cake:
• 1 box white or vanilla cake mix (plus ingredients it calls for: eggs, oil, water)—or use homemade vanilla cake (see optional recipe below)
For the Filling:
• 1 box (3.3 oz / 90g) white chocolate instant pudding mix
• 2 cups cold milk
• ¾ cup raspberry preserves or seedless raspberry jam (warmed slightly)
• Optional: 1–2 tbsp Chambord (raspberry liqueur)
For the Topping:
• 2 cups whipped topping (like Cool Whip) or homemade whipped cream
• ½ cup white chocolate shavings or curls
• Fresh raspberries (1 cup or more)

🔸 Instructions:
1. Bake the Cake:
1 Prepare and bake the cake in a 9x13-inch pan according to box instructions.
2 Let cool for 15 minutes.
2. Poke & Fill:
1 Using the handle of a wooden spoon or a thick straw, poke holes all over the cake — spaced about 1 inch apart.
2 In a bowl, whisk pudding mix with cold milk until just thickened (about 2 minutes).
3 Pour pudding over the cake, gently pushing it into the holes. Smooth excess over the top.
3. Add Raspberry Swirl:

🔸 Ingredients
🍰 For the Chocolate Sponge:
• ¾ cup (90g) all-purpose flour
• ¼ cup (25g) unsweetened cocoa powder
• 1 tsp baking powder
• ¼ tsp salt
• 4 large eggs (room temp)
• ¾ cup (150g) granulated sugar
• 1 tsp vanilla extract
• ¼ cup (60ml) milk
• Powdered sugar (for rolling)
🎂 For the Filling (Choose One):
A. Whipped Cream Filling:
• 1 cup (240ml) heavy cream
• 3 tbsp powdered sugar
• 1 tsp vanilla extract
B. Chocolate Buttercream (Richer):
• ½ cup (115g) unsalted butter, softened
• 1 ½ cups (180g) powdered sugar
• ¼ cup (25g) cocoa powder
• 1–2 tbsp milk or cream
• 1 tsp vanilla extract
🍫 Optional Ganache Topping:
• ½ cup (120ml) heavy cream
• 4 oz (115g) semi-sweet chocolate, chopped
• 1 tbsp butter (for shine)

🔸 Instructions
1. Preheat & Prep:
• Preheat oven to 350°F (175°C).
• Line a 10x15-inch jelly roll pan with parchment paper. Grease the paper and sides.
2. Make the Chocolate Sponge:
1 In a small bowl, whisk together flour, cocoa powder, baking powder, and salt.
2 In a large bowl, beat eggs for 3–5 minutes until pale, thick, and tripled in volume.
3 Gradually beat in sugar, then vanilla.
4 Gently fold in dry ingredients in batches, alternating with milk. Don’t overmix.
5 Spread batter evenly in pan. Bake 10–12 minutes, or until it springs back when lightly pressed.
3. Roll While Warm:
1 Lay a clean kitchen towel on a flat surface and dust generously with powdered sugar.
2 Immediately after baking, loosen edges of the cake and invert onto the towel.
3 Carefully peel off parchment paper.
4 Starting from the short end, roll the cake (with towel inside) into a spiral. Let it cool completely in this rolled shape (prevents cracking later).
4. Make the Filling:

TRIPLE CHOCOLATE CHEESECAKE WITH OREO CRUST

Ingredients

For the crust

250g Oreo cookies (crushed into fine crumbs)

80g melted butter

For the cheesecake filling

600g cream cheese (softened)

200g sugar

200g sour cream or plain Greek yogurt

3 large eggs

150g white chocolate (melted)

150g milk chocolate (melted)

150g dark chocolate (melted)

1 tsp vanilla extract

For the topping

200ml heavy cream

200g dark or milk chocolate (chopped)

Chocolate curls/shavings or mini Oreos for garnish

Instructions

1. Prepare the crust

Mix crushed Oreos with melted butter.

Press firmly into the base of a greased springform pan. Chill in the refrigerator while making the filling.

2. Make the filling

Beat cream cheese and sugar until smooth. Add sour cream and vanilla, mixing well.

Add eggs one at a time, mixing just until combined (do not overbeat).

Divide the batter evenly into three bowls.

Stir melted white chocolate into one bowl, milk chocolate into the second, and dark chocolate into the third.

3. Layer the cheesecake

Pour the dark chocolate batter over the crust, smoothing the top.

Carefully spoon the milk chocolate batter over it, spreading gently.

Finish with the white chocolate batter on top.

Tap the pan lightly to release air bubbles.

4. Bake

Bake in a preheated oven at 160°C (320°F) for 55–65 minutes, until the edges are set but the center is slightly jiggly.

Turn off the oven, crack the door, and let the cheesecake rest inside for 1 hour.

Chill in the refrigerator for at least 6 hours or overnight.

5. Prepare topping

Heat cream until hot but not boiling. Pour over chopped chocolate and stir until smooth and glossy.

Let cool slightly, then pour over the chilled cheesecake.

1 Moist, dark chocolate cake (single-layer or stacked)
2 Fantasy fudge frosting — a stovetop fudge that glides on warm and sets like ganache
3 Optional: Salt flakes, cocoa nibs, or chocolate shards for texture

🔹 PART 1: THE CAKE
Ingredients:
• 1 ¾ cups (220g) all-purpose flour
• ¾ cup (65g) unsweetened cocoa powder
• 2 cups (400g) sugar
• 2 tsp baking soda
• 1 tsp baking powder
• 1 tsp salt
• 2 large eggs
• 1 cup (240ml) buttermilk
• ½ cup (120ml) vegetable oil
• 2 tsp vanilla extract
• 1 cup (240ml) hot coffee or hot water
Instructions:
1 Preheat oven to 350°F (175°C). Grease and line a 9x13" pan or two 8-inch rounds.
2 In a large bowl, sift together flour, cocoa, sugar, baking soda, baking powder, and salt.
3 Add eggs, buttermilk, oil, and vanilla. Mix until smooth.
4 Stir in hot coffee — the batter will be thin.
5 Pour into prepared pan(s) and bake 30–35 minutes (for rounds) or 35–40 minutes (9x13).
6 Cool completely before frosting.

🔹 PART 2: FANTASY FUDGE FROSTING
This isn’t just frosting — it’s almost a layer of fudge poured over your cake and left to set into perfection.
Ingredients:
• ¾ cup (170g) unsalted butter
• ½ cup (120ml) whole milk or heavy cream
• ⅔ cup (55g) unsweetened cocoa powder
• 3 ½ cups (420g) powdered sugar (sifted for smoothness)
• 1 tsp vanilla extract
• Pinch of salt
• Optional: 1 tsp instant espresso powder (intensifies the chocolate)
Instructions:
1 In a saucepan over medium heat, melt butter.
2 Stir in cocoa powder (and espresso powder if using). Cook 1 minute until smooth.
3 Whisk in milk and bring just to a simmer.
4 Remove from heat and stir in vanilla and salt.
5 Gradually whisk in powdered sugar until smooth and glossy. (You can use a mixer for extra fluff.)
6 While still warm but not runny, pour over the cooled cake and spread gently with a spatula.
