🍒Cherry Pistachio Cookies 💚 Recipe ⬇️
1 2/3 cup all purpose flour
1 cup of softened unsalted butter
1/2 cup powdered sugar
1 box Instant Pistachio Pudding (3.4 oz box)
1 1/2 tsp almond extract
1/2 cup candied cherries (cut in quarters)
Beat butter until fluffy, add powdered sugar, almond extract & pudding mix. Beat until combined.
Add flour and continue to mix. Gently stir in cherries. Once dough is all combined, put in a ziplock bag and freeze for 15min or can be refrigerated overnight.
Scoop out cookie dough with a small cookie scoop onto parchment paper. Bake at 350 degrees for 9-11 minutes.
Once cooled, drizzle with icing.
To make icing… mix powered sugar and milk ( a little milk at a time) till you reach your desired thickness. You can add Wilton white icing for a whiter color.
