🍫🍒 Chocolate Forest Cake 🍫🍒
A rich and decadent chocolate cake layered with sweet cherry filling and topped with fluffy whipped cream, perfect for celebrations or a delightful dessert any day!
Ingredients:
For the Chocolate Sponge Cake:
• 1 ½ cups all-purpose flour
• 1 ½ tsp baking powder
• ¼ cup unsweetened cocoa powder
• ½ tsp salt
• ½ cup unsalted butter, room temperature
• 1 cup granulated sugar
• 3 large eggs
• 1 tsp vanilla extract
• ½ cup whole milk
For the Cherry Filling:
• 2 cups fresh or frozen cherries, pitted
• ½ cup granulated sugar
• 1 tbsp cornstarch
• 2 tbsp water
• 1 tbsp lemon juice
For the Whipped Cream:
• 2 cups heavy cream
• ¼ cup powdered sugar
• 1 tsp vanilla extract
For Decoration:
• Dark chocolate curls

Instructions:
1. Prepare the Chocolate Sponge Cake:
• Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper.
• In a bowl, whisk together the flour, baking powder, cocoa powder, and salt.
• In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
• Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
• Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
• Let the cakes cool completely in the pans, then transfer to a wire rack.
2. Prepare the Cherry Filling:
• In a saucepan, combine the cherries and sugar over medium heat. Cook until the cherries begin to release their juices.
• In a small bowl, mix the cornstarch with water until smooth. Add this mixture to the cherries and cook until the filling thickens.
• Stir in the lemon juice and remove from heat. Let the filling cool completely before using.
3. Prepare the Whipped Cream:
• In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to overbeat.
4. Assemble the Cake:
• Once the cakes have cooled, slice each cake in half horizontally to create four layers.
• Spread the cherry filling evenly between each layer of cake.
• Cover the entire cake with the whipped cream, smoothing it out with a spatula.
5. Decorate the Cake:
• Top the cake with dark chocolate curls for a finishing touch. You can also sprinkle a few more cherries on top for added decoration.
