Made eggplant in the air fryer, and I love how the thick slices get deeply browned around the edges while the middle turns soft and tender. I sliced the eggplant into rounds, brushed them with a little olive oil, added garlic, paprika, salt, pepper, and Italian seasoning, then air fried at 400°F for about 12–15 minutes.

I like cutting the slices fairly thick so they stay tender inside instead of drying out. Finish them with a little fresh parsley and garlic, like I did here, and serve as a side or tuck them into sandwiches and wraps. They’re also really good topped with a little marinara and mozzarella.

Tried corn on the cob in the air fryer and now I feel like I wasted years boiling water. ✨ I rubbed the cobs with a little butter, salt, and seasoning, then air-fried them for 10-12mins, flipping halfway. The kernels came out juicy and tender with those perfectly charred, golden edges that usually take a grill to get—but without standing outside or dealing with smoke. Honestly, I don’t think I can ever go back. 😋 🙌
