Zucchini layers with ricotta spinach and mozzarella:
Slice the zucchini and bake them in the over at 400 for about 10 minutes
Then sauté 1 onion with a little Olive Oil add I packed frozen chopped spinach defrosted salt pepper and a dash of nutmeg
Let cool then add 1 egg I cup of parmigiano and ricotta cheese
Then you layer the zucchini with the mixture add a little mozzarella and a little tomato sauce each layer
Bake at 400 for 4o minutes and then let it sick 10 minutes before serving

Keto Lemon Blueberry Donuts
1/2 c coconut flour
1/2 c sweetener your choice
4 eggs
2tsp baking powder
2 tsp lemon zest
1/4 c melted butter or Avocado oil
1/4 c freshly sqeezed lemon juice
1/4 c water
1/2 tsp vanilla extract
1/2 tsp lemon extract
1/2 c fresh blueberries
Combine all wet ingredients
Toss in the dry ingredients
Fd in the blueberries
Bake 325. For 15 to 18 minutes

Creamy Garlicky Shrimp with Spinach
4 Tbsp butter, divided
1 1/2lbs medium shrimp, peeled and deveined
5 cloves garlic, minced
1/2 c onion (I used green)
1/2 c sun dried tomatoes
1/2 pkg of Spicy Elotes Better Broth (mixed with 1/3c water) OR 1/4 c chicken broth
2 c chopped Spinach
1c heavy whipping cream
2 Tbsp parsley (optional) for garnish
Crushed red chili pepper flakes (optional)
What to do:
- Melt 1 Tbsp butter in large saucepan.
In a bowl season shrimp with salt and pepper to taste. Add shrimp, cook through.
- add onion and garlic to same skillet, about 1 min. Add tomatoes, stock to deglaze. Bring to boil, simmer until reduced by half. Stir in trmdd as I Ming butter. Add spinach , then heavy whipping cream.
- add shrimp back to pan to reheat about 1 min
Serve hot- garnish with parsley snd pepper flakes.
Can be served over cauliflower rice, pasta or zucchini noodles.

OMELETIZZA
This is my favorite low-carb Keto pizza alternative.
INGREDIENTS
3 T butter
4 eggs
salt, pepper, Italian seasoning mix
3 T heavy cream
5 T pizza sauce
1/2 c shredded mozzarella cheese
20 slices of pepperoni
oregano
INSTRUCTIONS
1. Start broiler to preheat.
2. Melt butter in an oven-safe, non-stick frying pan.
3. Blend: eggs, salt, pepper, seasoning, and cream.
4. Pour blended egg mixture into a hot, buttered frying pan.
5. Fry for a minute or two without stirring.
6. Transfer to broiler for two to three minutes, until eggs are firm.
7. Top with pizza sauce, cheese, pepperoni, and oregano.
8. Return to broiler for a couple of minutes until hot and bubbly.
9. Slide from pan onto a plate and serve hot

Keto Vegetable Beef Soup:
Ingredients:
1-1/2 lbs beef stew, cut into bite-sized cubes
Olive oil
2 tbsp butter
1 tbsp minced garlic
1 tbsp of Better Than Bouillon (beef flavored)
8 oz baby bella sliced mushrooms
1 medium boiler white onion, finely chopped
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tbsp Italian seasoning
1 tbsp tomato paste
4 cups beef broth (check for low-carb options)
1 bunch of scallions (~6) sliced
1 lb green beans (fresh or frozen)
1 lb baby carrots
Replace potatoes with cauliflower florets (about 1 lb)
Omit corn or replace with a low-carb alternative (e.g., cauliflower corn substitute)
1 can (15 oz) diced tomatoes with the liquid
Optionally, add a splash of Worcestershire sauce for extra flavor (check for sugar content)
Instructions:
In a skillet, melt the butter over medium heat. Add the minced garlic, Better than Bouillon, and mushrooms. Sauté until the mushrooms release their water, then cook for a minute or two longer to reduce. Remove the skillet from the heat and set aside.
In a large Dutch oven, heat a few tablespoons of olive oil over medium-high heat. Add the beef and sauté until it begins to brown, about 6 minutes. Use a slotted spoon to remove the beef.
Turn down the heat to medium and add another tbsp of olive oil to the Dutch oven. Add the chopped white onion and cook for a few minutes until it starts to soften.
Add the salt, paprika, and tomato paste. Cook, stirring constantly, for about 1 minute. Add the beef and mushrooms and stir for about a minute.
Add the vegetables (green beans, carrots, cauliflower, scallions, and tomatoes), pepper, Italian seasoning, and beef broth. Stir well and bring to a simmer. Turn the heat to low, cover, and let the soup simmer for about two hours, stirring occasionally.

🌶Low Carb Stuffed Bell Peppers 🌶
Ingredients
1 lb Ground beef, cooked and drained
12 oz Cauliflower rice, steamed and drained
6 ea Bell peppers
16 oz Rao’s or your choice tomato sauce
1/2 cup Sour cream
1/2 cup Shredded cheese, mozzarella or Italian blend
1 tbsp Parsley
1/2 tsp Garlic powder
Salt and pepper to taste
Instructions
Combine the cooked ground beef (or ground sausage if preferred) with the steamed cauliflower rice. Be sure to drain the cauliflower rice and press out as much of the liquid as possible.
Add the tomato sauce (use the tomato sauce with basil, garlic, and oregano for added flavor), sour cream, and seasonings. Mix well.
Wash and dry bell peppers. Cut the tops off the bell peppers and remove the seeds and white membrane. Fill the peppers with the ground beef mixture and place in a baking dish.
Bake, uncovered, at 350 for 20-25 minutes. Remove from oven, and top with cheese. Return to the oven for another 5-10 minutes to melt the cheese. Use the broiler to brown the cheese to your liking.
NOTE: For softer bell peppers, cover with foil before baking.

Keto Cinnamon Crumble Muffins
Crumble topping:
1/2 c almond flour
3 TB Swerve Brown sugar
2 TB coconut flour
3/4 tsp cinnamon
1/4 c melted butter
Muffin Mix:
2 c almond flour
1/3 c Swerve of Monkfruit
1/4 c Protein powder- I used keto//os Pro Butter Cookie
3 TB baking powder
1/2 tsp cinnamon
1/4 tsp salt
1/2 c melted butter
4 eggs
1/2 c almond milk unsweetened
1/2 tsp vanilla
Drizzle:
1/4 c Swerve
2 TB water
1/2 tsp vanilla
Mix crumble ingredients together and place to the side
Mix all muffin ingredients together and scoop into muffin liners, filling them almost to the top.
Top each muffin with crumble mix and place in the oven at 325 degrees for 25 to 30 minutes.
Let cool and drizzle each one & Enjoy!! Delicious 😋

I'm excited to share this one with you guys! 3 ingredient everything bagels 😛 just made these and they were good!

Recipe:
1 cup of plain greek yogurt
2 cups of almond flour
1 tsp of baking powder

Combine the yogurt and almond flour until it forms a dough like consistency. You can use less almond flour just make sure it comes out doughy. Add tsp of baking powder and a dash of salt. Roll into balls, press them down, poke a hole in the middle with your finger and shape accordingly. Coat with egg wash (optional) Next add your topping. I used everything but the bagel seasoning but you can use seasme, garlic, salt, poppy seeds or even cheese! Pop in the oven for 15 - 20 minutes on 375 or until golden brown. That's it! You can make little breakfast sandwiches with these or with some veggies cream cheese and lox, you name it! Enjoy😊

Edit: I see comments saying here are high calorie but there 160 cals and 4.5 carbs.. that's low carb. Add an egg and bacon that's less than 5 for breakfast
