To make Slow Cooker Pozole, you'll need:
Ingredients:
1.5 pounds boneless, skinless chicken thighs
1 onion, diced
4 cloves garlic, minced
2 cans (15 ounces each) hominy, drained and rinsed
1 can (14.5 ounces) diced tomatoes, undrained
4 cups chicken broth
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper, to taste
Optional toppings: shredded cabbage, sliced radishes, chopped cilantro, lime wedges, diced onion, avocado slices
Instructions:
Place the chicken thighs, diced onion, minced garlic, drained hominy, diced tomatoes, chicken broth, dried oregano, ground cumin, and chili powder in the slow cooker.
Season with salt and pepper to taste.
Stir everything together to combine.
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Cooker Pozole
Once the chicken is cooked, remove it from the slow cooker and shred it using two forks.
Return the shredded chicken to the slow cooker and stir it into the pozole.
Taste the pozole and adjust the seasoning with salt and pepper, if needed.
Serve the slow cooker pozole hot, ladled into bowls and topped with shredded cabbage, sliced radishes, chopped cilantro, a squeeze of lime juice, diced onion, and avocado slices, if desired.
