🍝🧀🌶 **Cheesy Rotel Sausage Penne Bake**
**Ingredients:**
🍝 12 oz penne pasta
🌭 1 lb smoked sausage or beef sausage, sliced
🫒 2 tbsp olive oil
🧈 2 tbsp butter
🧄 3 cloves garlic, minced
🧅 1 small onion, diced
🌶 1 can (10 oz) Rotel diced tomatoes & green chilies, drained slightly
🥛 1 cup heavy cream
🍗 1/2 cup chicken broth
🧀 8 oz cream cheese, softened
🧀 1 cup shredded cheddar cheese
🧀 1 cup shredded mozzarella cheese
🧂 Salt & black pepper, to taste
🌶 Optional: smoked paprika or red pepper flakes
🌿 Optional: chopped parsley
**Directions:**
1️⃣ Preheat oven to 375°F (190°C).
2️⃣ Cook penne pasta according to package directions; drain and set aside.
3️⃣ Heat olive oil and butter in a skillet over medium heat.
4️⃣ Add sausage and cook until lightly browned; remove and set aside.
5️⃣ In the same skillet, sauté onion until soft, then add garlic and cook 30 seconds.
6️⃣ Stir in Rotel, heavy cream, and chicken broth; simmer 2–3 minutes.
7️⃣ Add cream cheese and stir until melted and smooth.
8️⃣ Mix in cheddar and mozzarella until creamy.
9️⃣ Add cooked pasta and sausage, tossing until fully coated.
🔟 Transfer to a greased baking dish and bake 20–25 minutes until bubbly and lightly golden.
