Lemon Blueberry Delight

Ingredients:
Blueberry Filling:
4 heaping cups blueberries, fresh or thawed
1 cup granulated white sugar
Juice of 2 lemons
Lemon Cake:
3 cups all-purpose flour, spooned and leveled
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter, at room temperature
½ cup vegetable oil
1 ¾ cups granulated white sugar
3 large eggs
1 cup milk
½ cup freshly squeezed lemon juice
2 teaspoons vanilla extract
1 tablespoon lemon zest
Lemon Cream Cheese Frosting:
1 cup unsalted butter, at room temperature
8 oz cream cheese, softened
2 cups powdered sugar, sifted
1-2 tablespoons freshly squeezed lemon juice
Directions:
Make the Blueberry Filling: In a medium saucepan, combine blueberries, sugar, and lemon juice. Simmer over medium heat until blueberries soften and sauce thickens, about 5-10 minutes. Cool to room temperature.
Make the Lemon Cake: Preheat oven to 350°F (175°C). Line two 8" cake pans with parchment. Mix flour, baking powder, and salt. In another bowl, cream butter, oil, and sugar, then incorporate eggs one at a time. Alternate dry ingredients with milk and lemon juice, ending with dry. Stir in vanilla and zest. Divide batter between pans and bake 28-32 minutes. Cool.
Make the Lemon Cream Cheese Frosting: Whip butter and cream cheese until smooth. Add powdered sugar and lemon juice to desired consistency.
Assemble the Cake: Trim tops of cakes for flat layers. Layer cake, frosting, and filling, ending with cake. Frost exterior. Chill 4 hours.

Ingredients:
Cake:
1 ¼ cups unsweetened applesauce or oil
2 cups granulated sugar
3 eggs, room temperature
2 cups all-purpose flour
1 teaspoon baking soda
1 ½ teaspoons baking powder
½ teaspoon salt
1 teaspoon cinnamon
2 cups grated carrots
1 cup shredded sweetened coconut
1 cup chopped nuts (optional)
1 teaspoon vanilla extract
1 cup crushed pineapple (not drained; use pineapple in juice)
Cream Cheese Frosting:
½ cup butter, softened
8 ounces cream cheese, softened
1 teaspoon vanilla extract
1 pound powdered sugar
Optional toppings: toasted pecans or coconut

Directions:
Preheat oven to 350°F (175°C).
Mix applesauce, sugar, and eggs. Blend in flour, baking soda, baking powder, salt, and cinnamon. Fold in carrots, coconut, nuts, vanilla, and pineapple.
Pour batter into greased pans. Bake for 25-30 minutes for 8-inch pans, 35-40 minutes for larger pans. Cool in pans for 10 minutes, then transfer to a rack to cool completely.
For the frosting: Whip butter, cream cheese, and vanilla until fluffy. Gradually beat in powdered sugar until smooth. Frost cooled cakes.

Directions:

1 pound farfalle pasta

2 cups cooked, shredded chicken

1 cup shredded Gruyere cheese

Directions:

3 small boneless, skinless chicken breasts
1 teaspoon poultry seasoning
1 teaspoon salt
½ teaspoon cracked pepper
3 cups chicken broth
2 pounds Yukon Gold potatoes, diced
1 10 oz. can cream of chicken soup
1 10 oz. can cream of potato soup
1 cup frozen mixed vegetables
1 cup sour cream
1 ½ cups shredded Colby Jack cheese, divided
1 cup French’s fried onions
Directions:

Season chicken breasts with poultry seasoning, salt, and pepper.
In a large pot, bring chicken broth to a boil, add seasoned chicken breasts, and cook for 20 minutes.
Preheat the oven to 400°F and grease a 9x13 baking dish.
Remove chicken from broth, shred with forks.
Dice potatoes into ½ inch cubes.
In a large bowl, combine soups, vegetables, sour cream, and 1 cup cheese.
Fold in shredded chicken and diced potatoes.
Transfer mixture to baking dish, cover with foil, and bake for 45 minutes.
Remove foil, top with remaining cheese and fried onions, and bake for an additional 5-10 minutes until golden and bubbling.
