Lemon Blueberry Delight

Ingredients:
Blueberry Filling:
4 heaping cups blueberries, fresh or thawed
1 cup granulated white sugar
Juice of 2 lemons
Lemon Cake:
3 cups all-purpose flour, spooned and leveled
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter, at room temperature
½ cup vegetable oil
1 ¾ cups granulated white sugar
3 large eggs
1 cup milk
½ cup freshly squeezed lemon juice
2 teaspoons vanilla extract
1 tablespoon lemon zest
Lemon Cream Cheese Frosting:
1 cup unsalted butter, at room temperature
8 oz cream cheese, softened
2 cups powdered sugar, sifted
1-2 tablespoons freshly squeezed lemon juice
Directions:
Make the Blueberry Filling: In a medium saucepan, combine blueberries, sugar, and lemon juice. Simmer over medium heat until blueberries soften and sauce thickens, about 5-10 minutes. Cool to room temperature.
Make the Lemon Cake: Preheat oven to 350°F (175°C). Line two 8" cake pans with parchment. Mix flour, baking powder, and salt. In another bowl, cream butter, oil, and sugar, then incorporate eggs one at a time. Alternate dry ingredients with milk and lemon juice, ending with dry. Stir in vanilla and zest. Divide batter between pans and bake 28-32 minutes. Cool.
Make the Lemon Cream Cheese Frosting: Whip butter and cream cheese until smooth. Add powdered sugar and lemon juice to desired consistency.
Assemble the Cake: Trim tops of cakes for flat layers. Layer cake, frosting, and filling, ending with cake. Frost exterior. Chill 4 hours.
