fried taco roll ups 🌮✨

crispy, cheesy, and loaded with bold taco flavor, these fried taco roll ups are the ultimate comfort snack! golden tortillas stuffed with seasoned beef and melty cheese, then fried to crunchy perfection — perfect for parties, movie nights, or anytime cravings hit 😍🔥

ingredients:

* 1 lb ground beef
* 1 packet taco seasoning
* 1/3 cup water
* 1 1/2 cups four-cheese blend
* 2 tbsp cream cheese, softened
* 8 small flour tortillas
* vegetable oil for frying

optional toppings:

* sour cream
* salsa
* guacamole
* jalapeños
* fresh cilantro

instructions:

1. cook the ground beef in a skillet over medium heat until browned. drain excess grease.
2. add taco seasoning and water, then simmer for 3–4 minutes.
3. stir in cream cheese until creamy and combined.
4. place tortillas flat and sprinkle cheese over each one. add a spoonful of taco meat.
5. roll tightly like taquitos.
6. heat oil to 350°F (175°C) and fry the roll ups until golden and crispy on all sides.
7. drain on paper towels and serve hot with your favorite dips.

tips:

* warm tortillas slightly before rolling so they don’t crack
* air fry at 390°F for 8–10 minutes for a lighter version
* add diced peppers or onions for extra flavor

Crustless Coconut Pie (Toasted-Top Style)

Ingredients

½ cup unsalted butter, melted

¾ cup granulated sugar

⅓ cup all-purpose flour

1½ cups whole milk

4 large eggs, room temperature

1 teaspoon vanilla extract

¼ teaspoon salt

2 cups sweetened shredded coconut

Instructions

Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.

Whisk melted butter and sugar until smooth.

Add eggs one at a time, whisking well after each.

Stir in milk, vanilla, and salt.

Whisk in flour until fully smooth.

Fold in shredded coconut.

Pour into the prepared dish and level the top.

Bake 50–55 minutes, until the top is deep golden and the center is just set.

Cool at least 45 minutes before slicing.

Pineapple Cheesecake Fluff
Ingredients
For the Cheesecake Fluff
8 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 box (3.4 oz) instant vanilla pudding mix (dry)
1 can (20 oz) crushed pineapple, very well drained
1 tub (8 oz) whipped topping, thawed
1 cup mini marshmallows
½ cup sweetened shredded coconut (optional)
For the Topping
1–2 cups whipped topping
Pineapple chunks or tidbits
2–3 tablespoons crushed graham crackers
Pinch of cinnamon (optional)
Instructions
In a large bowl, beat softened cream cheese until completely smooth.
Mix in powdered sugar and vanilla until light and creamy.
Beat in the dry pudding mix until fully incorporated and thickened.
Drain pineapple extremely well, pressing out excess liquid.
Gently fold into the mixture.
Fold in whipped topping carefully to keep the mixture light and airy.
Gently mix in marshmallows and coconut (if using).
Transfer to a 9×13-inch dish or foil pan and smooth lightly.
Spread whipped topping over the surface.
Top with pineapple chunks and sprinkle with crushed graham crackers.
Add a small pinch of cinnamon if desired.
Refrigerate at least 2 hours, preferably overnight for best texture.
Serve chilled.

Chow Chow (Old Fashioned)
Ingredients
1 small cabbage, chopped
6 to 8 green or red tomatoes, chopped
6 medium bell peppers, chopped
6 large onions, chopped
2 hot peppers, chopped
3 cups sugar
5 cups white vinegar
1/4 cup salt or pickling salt
How To Make CHOW CHOW
Put all ingredients in a large pot and bring to a boil. Reduce heat and cook for 20 to 25 minutes or until desired tenderness is achieved.
This recipe is designed to be put in pint jars and sealed. Makes 8 to 9 pints. But you could cut recipe down to use for one night of dinner.
