Warm up your kitchen and soul with this classic homemade Chicken Rice Soup. It’s nourishing, full of flavor, and incredibly easy to make.
Ingredients:
- 2 boneless, skinless chicken breasts (or thighs)
- 1 cup diced carrots
- 1 cup diced celery
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup long-grain white rice (brown rice works great too)
- 6 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 tablespoon olive oil
- Fresh parsley, chopped (for garnish)
Instructions:
Heat olive oil in a large pot over medium heat. Sauté carrots, celery, and onions for 5 minutes, then add garlic and cook until fragrant.
Add chicken broth, chicken breasts, salt, pepper, thyme, and bay leaf. Simmer covered for 20-25 minutes until chicken is cooked.
Stir in rice and simmer for another 15 minutes.
Remove chicken, shred with forks, then return to the soup. Cook 5 more minutes, discard the bay leaf, garnish with parsley, and serve hot.
