Cinnamon Churro Cheesecake Bars

Ingredients:

Crust:
1 cup graham cracker crumbs
4 tbsp melted butter
1/4 cup sugar
1 tsp cinnamon
Cheesecake Filling:
16 oz cream cheese, softened
1 cup sugar
1 tsp vanilla extract
2 large eggs
Cinnamon Sugar Topping:
1/4 cup sugar
2 tsp cinnamon

Directions:

Prepare the Crust:
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press firmly into the bottom of a baking dish.
Make the Cheesecake Filling:
In a bowl, beat cream cheese and sugar until smooth. Add vanilla extract and eggs, beating until combined.
Pour the filling over the crust, spreading evenly.
Add Cinnamon Sugar Topping:
Mix sugar and cinnamon. Sprinkle generously over the cheesecake filling.
Bake:
Bake for 25-30 minutes or until the cheesecake is set. Cool, then refrigerate for at least 2 hours.
Serve:

Brown Butter Chocolate Chip Cookies

Ingredients:

1 cup unsalted butter (2 sticks)
1 cup brown sugar (packed)
½ cup granulated sugar
2 large eggs
2 tsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
1 ½ cups semi-sweet chocolate chips

Directions:

1. Brown the Butter:
Melt the butter in a saucepan over medium heat. Stir continuously until the butter foams, then turns golden brown with a nutty aroma (about 5–7 minutes).
Remove from heat, pour into a bowl, and let cool for 10 minutes.
2. Mix the Wet Ingredients:
In a large bowl, combine the browned butter, brown sugar, and granulated sugar. Beat until smooth.
Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract.
3. Combine Dry Ingredients:
In a separate bowl, whisk together flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until combined.
Fold in the chocolate chips.
4. Chill the Dough:
Cover the dough and refrigerate for at least 1 hour (or up to 24 hours for enhanced flavor).
5. Bake the Cookies:

¼ cup (50 g) packed light brown sugar
1 large egg
1 large egg yolk
1 teaspoon pure vanilla extract
2¾ cups (343 g) all-purpose flour
1 teaspoon baking soda
¼ teaspoon fine sea salt
½ to ⅔ cup fresh strawberries, finely diced
For the Cream Cheese Filling:

¾ cup (170 g) cream cheese (regular or dairy-free), softened
¼ cup (30 g) powdered sugar (increase to ⅓ cup if using regular dairy cream cheese)
Instructions

Prepare the filling: In a small bowl, beat cream cheese and powdered sugar until smooth. Drop 12 heaping teaspoons of the mixture onto a parchment-lined tray. Freeze for at least 1 hour, or until firm but not rock-hard.
Mix dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt. Set aside.
