Wonton Wrapper Free Spicy Wonton Broth
Full Recipe Below ⬇️

1lb Organic Ground Chicken (light and dark meat)
1/2lb ground pork (heritage is best)
1 box organic low sodium chicken stock / approx 4 cups
8 green onions / chopped (reserve 3 chopped diagonally for broth)
2 cloves garlic
1 finely deseeded and finelychopped jalapeño
1 large k**b of ginger (part of it cubed for stock / part ground for filling)
Handful of fresh cilantro roughly chopped (extra for broth)
1 Tbs Chili Crisp (I love Everiday)
1 Tbs JF Spicy Salt

Preheat oven to 375 convection

Place 2 small sheet trays or one large and line with unbleached parchment paper / set aside

In a medium soup pot pour entire contents of broth into pot and add 4 roughly chopped k**bs of ginger (skin on) and 3 chopped green onions. Turn to low and move to prep meatballs

In a medium / large bowl add ground chicken, ground pork

I’m a small sauce pan sauté on medium in olive oil 1 finely chopped jalapeño, 5 chopped green onions, 2 cloves finely diced or grated garlic, 2 tsp grated fresh ginger till just softened. Once done remove from pan and cool in a dish

Once cooled combine the cooked ingredients into the meat mixture and add 1 tbs (you can use less) of JF Spicy Salt and 1 Tbs approx of chili crisp (depending how spicy you want them) a handful of freshly chopped Jalapeno and mix well till just combined. Don’t overmix or your meatballs will be tough.

This recipe tellers approx 42 small meatballs. Please approx 1 tsp size small meatballs across parchment lined tray/s you want them very small (it’s more fun to eat and feel more link you are eating an actual wonton)

Bake meatballs for approx 12 min till 165 internal temp

Remove ginger k**bs from broth

Add approx 3/4 of meatballs into broth (save some for meal prep to add to a salad or an extra meal)

Serve with extra chili crisp on top! It’s so good trust me and you can throw this together in under 30 min!

This week we demystify clip in hair.
Clip it in when I want it, take it out when I don’t. I never sleep in it and I wash and style it just like my own hair. I’ve struggled with thin hair ever since going through chemotherapy in my 30s and it took me years to figure out what worked for me.

Not going or bonding in hair (my hair is too fine and it never grew) but instead clipping it in only when I needed it and removing it every night never leaving it in too long. It’s allowed my hair to grow to almost the length of my clip in pieces. In today’s Maedyn newsletter we talk all things hair including my favorite hair products.
